<description>&#60;p&#62;Sio...I made the recipe with the Jiffy corn muffin mix...it tasted really good, but it was denser than I would have liked...I wanted it to be more of a corn pudding, but it was more like cornbread. I think I will add more wet ingredients next time.

<description>&#60;p&#62;My specialty is a corn casserole. I've made it for years the way my mom did, but this year I'm mixin' it up a bit. The traditional recipe called for one can of creamed corn, a cup of milk, an egg, maybe a wee bit of sugar, and saltine cracker crumbs. Whip the egg until frothy, slowly add the milk and keep beating until the mixture is frothy. Fold in the creamed corn carefully, add spices of your choosing (I generally used Mrs. Dash onion and herb and a touch of nutmeg), and add most of the cracker crumbs (I would crush an entire sleeve of saltines). Let the mixture set so the crackers absorb some liquid, then taste. Add a wee bit of sugar to bring out the wonderful flavors. Pour into a greased 1.5 quart dish, top with the remainder of the cracker crumbs, dot with butter (you can also spray the top with Pam), and put into a 350 degree preheated oven. Cook for about an hour. The corn souffle will POUF up in the middle when it's done, and will get a nice golden brown on top.&#60;/p&#62;
&#60;p&#62;This year, I'm trying a new version. One can each of creamed and regular corn (regular or salt-free), one stick butter, melted, a cup of sour cream, two eggs, a box of Jiffy corn muffin mix, some spices of choice, and some shredded cheddar.&#60;/p&#62;
&#60;p&#62;Combine melted butter with sour cream, corns, and Jiffy mix. Add in your herbs of choice. Pour into a greased casserole dish. Bake for 45 minutes at 350 (preheated oven). Remove casserole, top with cheese, and return to the oven for another 10-15 minutes.
