Ooooh the Mac-N-Cheese with truffle oil does sound good and so does CBM's cornbread. I always have good luck with Jiffy cornbread mix and that recipe sounds tasty AND doable. Thanks again littermate chefs!

Dee, I will definitely have to go there this week on my way home from work!.....

.... tomorrow, Mr. AV and I are going to the beach, I'm packing a picnic lunch and we'll probably eat up leftovers tomorrow night......

.... even tho I'll be covered up in my 'sun clothing' from head to foot, it will be SO fun to just have a good time and frolic in the ocean! I really like the 'body glove' line of SPF protected shirts and hats....... a 70+ sun block and NO greasy sunscreen that I'm allergic to!!!!! of course, people might have to wear blinders because I'm so pale white, and I might get mistaken for a Canadian tourist (LOL - no offense intended)..... I've just never taken well to sun!

I use one of those little Jiffy corn muffin mixes. I dump in a small can of creamed corn, a small can of chopped Ortega chili and one egg. Stir lightly, if it's really powdery I add a couple tablespoons of milk or plain yogurt, then spoon into a pan and bake at about 400 degrees for a little less time than the package recommends. I've taken this to potlucks and had people beg me for the recipe.

That really does look deeeelish Dee. I think it's the time of year. I'm craving buttery cornbread and hearty soups as well as root veggies like carrots and parsnips. That Supercook site is great because it has recipes for all the root vegetables. You will have to try Christina's pie!!!

Now I am craving cornbread! Earlier today, I was watching this episode of Cristina Ferrare's Big Bowl of Love. I really like that show! She made chicken pot pie with cornbread on top instead of the usual pastry and it looked delicious! I am going to have to make some cornbread now...
Here is the recipe:

Thanks all of you!! Fall souptime is upon me and I was hoping to fix the "desert-style" cornbread this time. All of these suggestions sound wonderful and I know I need to stop mixing so thoroughly, but it is such a bad habit! I will try extra hard with my next batch of cornbread. Thank You all cooks!

sour cream....... add an 8oz container to any basic receipe and it will most likely give it that moisture you're looking for......

Maybe Grandma used buttermilk in her recipe? This sounds like alot of sugar, but that could be reduced. (I always put chili sauce on meatloaf, too). :)

How do you get cornbread to be somewhat moist?! I add melted butter, sometimes some corn or shredded cheddar. I seem to use a different recipe every time, trying to get moist cornbread like my Grandma's and nothing seems to work. I love cornbread with hearty autumn soups but we often end up choking on the dry crumbs. My cooking is good, but my baking always needs help :(
