I got the idea from a gardening magazine I was given this afternoon. It has quite a few great looking recipes in it, like making bread in terracotta plant pots, some great looking focaccia and other herb related recipes.

&#60;p&#62;Peppers are typically stuffed with (browned) ground meat (beef, chicken, lamb, pork would work), onions, peppers, garlic, grated cheese ( a little parmasean typically) and spices.... you can vary it depending it on your taste, but then bake them for about 30-45 min. and they are delicious!....... assuming of course that you have roasted your peppers first..... (cold raw peppers wouldn't work here)! :)

<description>&#60;p&#62;I first roast the red pepper brushed very lightly or sprayed with olive oil and sprinkled with black pepper for about 15-20 minutes. The stuffing is hamburger, cream of mushroom soup (healthy request), brown rice (sometimes saffron rice), chopped fresh mushroom, and colby jack cheese. Stuff the peppers and roast for 20-25 minutes. Simple and not much to them, but it is tasty.

<description>&#60;p&#62;Since there's just two humans in this house, I cut the dinners I get at CostCo in half and freeze the second half.  They have a great pork roast stuffed with spinach and a turkey roast stuffed with dressing and cranberries.  By the time I pull the second half out of the freezer, hubby has forgotten it.  Whip up a salad and some cous-cous or some steamed vegetables and he thinks I've slaved all day making him a meal.&#60;/p&#62;
&#60;p&#62;Of course, the pizza guy does his fair share of providing meals as well.  And I'm not above making waffles and sausage and claiming it's dinner.&#60;/p&#62;
&#60;p&#62;Tonight though, he's getting pork roast, salad and Chinese peas with almonds.  And I get to watch a new NCIS. If I could be 100% positive that Jethro Gibbs would come over to investigate, I would probably be willing to do bodily harm to a Navy dude.

Just got done clearing snow (with a snow blower thank goodness) from mine and three neighbors' driveways and sidewalks and my bum knee is cranky.  And with more snow falling all night, I get to do it again tomorrow!  So, whatever is hot, filling, and EASY.
