And I make really good meat sauce. But I can't eat it anymore :-( I had an ulcer a few years ago and ever since then meat sauce and I just don't seem to get along.</p> <p>Pika, I split the acorn squash, remove the seeds and put it cut side down on a foil lined baking sheet. Bake for about 45 minutes at 350. Sometimes I put butter, cinnamon and allspice on it because acorn squash sort of resembles pumpkin. But tonight I don't want those spices and so I'm going to make a lime, butter and hot red pepper flake sauce to put on it so that it will have a little bit of a kick.</p> <p>Speaking of that..... Comfort food (daughters' favorite)</p> <p>It called "the NO-FAIL, CAN'T MESS UP, EVEN SVEN CAN MAKE IT CHICKEN CASSEROLE"</p> <p>1 pack bone-in ,skin on chicken thighs<br /> 1 pack bone-in , skin on drumsticks<br /> (Yes you can use breasts or whatever pieces you like)<br /> 2 cups white rice - whatever kind you like<br /> 4 1/4 cups chicken stock<br /> 1 1/2 cup sliced mushrooms<br /> 2 large gloves garlic chopped fine<br /> 1 medium onion sliced<br /> 1 tlb. chopped fresh parsley &#38; thymne<br /> Salt, Pepper</p> <p>Preheat oven to 375. On stove top put chicken stock in a pot and bring up to a slow boil. In a skillet, brown chicken pieces in a little olive oil and remove to a plate. Pour out that oil, add a little more and brown onions for 2 mins. add garlic &#38; mushrooms and cook until mushrooms are tender.</p> <p>Spray a ceramic or pyrex baking dish with Pam. Pour rice in, mushroom/onion mixture and fresh spices. Pour hot chicken stock over that and stir. Add in chicken pieces. Cover tightly with foil. I don't feel bad otherwise and unfortunately, I don't seem to be losing any weight from it. The tuna sounded tempting, but I hate to go pay for a tuna sandwich when I make them so often at home! </p> <p>I know I need to eat something. Saturday night I wasn't hungry and still wasn't hungry Sunday morning, then next thing I know I have a total blood sugar crash and came close to going down. Fortunately I was at a friend's house enjoying electricity and heat and she had sweet tea and peanuts handy.
