&#60;p&#62;Stuffed Burgers Makes 1&#60;br /&#62;
This is one case where size DOES matter. Remember - you're putting 2 burger patties together, and if they're too big, it'll be outta control. &#60;/p&#62;
&#60;p&#62;Ingredients&#60;br /&#62;
For each burger you'll need:&#60;br /&#62;
Two 1/4 pound hamburger patties&#60;br /&#62;
1/3 cup red onion, diced&#60;br /&#62;
1-2 tablespoons steak sauce, try a spicy one&#60;br /&#62;
1 slice cheese - call me crazy, but I think you've gotta go with American slices here (It's all about the meltability.)&#60;br /&#62;
1 hamburger bun &#60;/p&#62;
&#60;p&#62;Steps&#60;br /&#62;
Season the red onions with a little salt &#38;#38; pepper and saute in a little olive oil &#38;#38; butter.&#60;br /&#62;
Place a slice of cheese on one burger, then the onions, then the steak sauce and top with the other burger.&#60;br /&#62;
Try to gently pinch the edges of the two burgers together and you're ready to grill.&#60;br /&#62;
Throw them on the grill, carefully, and cook until done.

That Pimm's Cup...right up my alley since I'm a gin n' tonic girl I welcome an alternate way to make a gin drink.  Medicinally of course.  Oh and the flank steak has to be heart healthy, it even uses orange juice!  =)

<description>&#60;p&#62;Ok, just got my Sam the Cooking Guy newsletter and thought I'd share (the quotes are from Sam!)  &#60;/p&#62;
&#60;p&#62;1.  Sweet &#38;#38; Spicy Flank 4 servings&#60;br /&#62;
A good flank steak is one of my favorite things. Just remember you have a day of marinating ahead you before you can eat it...&#60;/p&#62;
&#60;p&#62;Ingredients&#60;br /&#62;
1 flank steak, about one and a half pounds&#60;br /&#62;
3 ounces chipotle peppers with adobo sauce&#60;br /&#62;
1/2 cup brown sugar&#60;br /&#62;
1 bunch green onions&#60;br /&#62;
1/4 cup cilantro&#60;br /&#62;
8 ounces orange juice &#60;/p&#62;
&#60;p&#62;Steps&#60;br /&#62;
Put all ingredients except flank in a food processor or blender and whirl until smooth&#60;br /&#62;
Put flank and marinade in a large Ziploc bag and seal - refrigerate over night&#60;br /&#62;
Remove from fridge 30-45 before grilling&#60;br /&#62;
Heat grill on high then grill flank about 5 minutes each side for medium rare&#60;br /&#62;
Slice into thin strips across grain to serve &#60;/p&#62;
&#60;p&#62;2. Corn Salad Serves 4&#60;br /&#62;
You can use either fresh corn that you grill or a can of corn - and trust me...the can is very easy and still really really good. Don't knock it until you've made it. &#60;/p&#62;
&#60;p&#62;Ingredients&#60;br /&#62;
3 ears of corn, husks removed, or&#60;br /&#62;
One-15 ounce can corn kernels&#60;br /&#62;
1 red pepper, diced small&#60;br /&#62;
fresh cilantro, finely chopped to make about 1/4 cup&#60;br /&#62;
1/4 red onion, thinly sliced&#60;br /&#62;
1/2 teaspoon cayenne&#60;br /&#62;
4 ounces goat cheese crumbles&#60;br /&#62;
Juice from 1/2 lime&#60;br /&#62;
2-3 tablespoons olive oil&#60;br /&#62;
Pinch of Kosher salt&#60;/p&#62;
&#60;p&#62;Steps&#60;br /&#62;
Brush corn with olive oil and roast on the grill until softened and brown in spots - let cool, cut off husk and put in bowl, or&#60;br /&#62;
If using the canned corn, drain the water and cook corn in a very hot pan with a little oil until it softens a bit and starts to get browned in spots - then put in a bowl&#60;br /&#62;
Add all remaining ingredients and mix well - serve and smile&#60;/p&#62;
&#60;p&#62;3. Pimm's Cup Makes 1&#60;br /&#62;
Pimms's is a gin based alcohol created in London in 1840 by the owner of a London oyster bar. It can be mixed with 7up, lemonade or in this case - ginger ale. &#60;/p&#62;
&#60;p&#62;Ingredients&#60;br /&#62;
2 parts Pimm's&#60;br /&#62;
2 parts ginger ale&#60;br /&#62;
1 slice orange&#60;br /&#62;
1 long cucumber spear&#60;/p&#62;
&#60;p&#62;Steps&#60;br /&#62;
Fill a glass with ice and add Pimm's and ginger ale&#60;br /&#62;
Squeeze and drop in orange wedge&#60;br /&#62;
Add cucumber to stir, then leave in and drink
&#60;/p&#62;</description>
