I used to make my Christmas fruit cake in October/November but Mr MS and I are the only ones who eat it and it's way too much cake for us to eat.<br /> I used to soak my fruit in gingerale for 48 hours but you can use almost anything for that, whiskey,sherry,bourbon, orange/lemon juice etc. After the cake is cooked and cooled you can also 'feed' the cake by poking holes in it with skewers and dribbling the alcohol of your choice over it in small amounts each day for a week or so. Fruit cake is sounding better every minute isn't it.<br /> I loved cover it with almond paste and then royalty icing. If you soak the fruit in brandy before you mix it with the dried ingredients it's never "dry" and with a slice of strong, mature cheddar it can't be beaten.
