Rice Pudding

  1. Whenever I cook rice, I always seem to cook too much and end up with some left over. Does anyone have any quick and easy recipes for using it up, like rice pudding or some other dessert? Or even anything savoury?

  2. I wish I could help with a good reciepe, but I don't have one.. I have got to be really good friends with many neighbors by taking them leftovers..

  3. Here's an idea.

    Is it old fashioned rice, double boiler style?
    If so, let's micro a serving as in oatmeal, stir in some raisins, sprinkle
    with brown sugar and pour on some milk or fat-free 1/2 & 1/2. I love 1/2 n 1/2
    on my cereals.

    I would then call it rice pudding, or warm rice cereal for you peeps in the north.

  4. Pour custard over it and serve with fruit.
    Make an egg custard, pour over the rice,stir through and cook in oven, sitting in dish of water. Sprinkle with nutmeg.

  5. Cooked rice, left for a day in the fridge (makes it stick better), makes great rice balls. I have a great recipe, good for vegetarians, I'll put up later tonight when I get home...

  6. I find that fried rice works better with leftovers than it does with fresh rice. You could always just fry up some vegetables, add in some rice and soy or terriyaki. takes like five minutes.

  7. Rice Pudding

    2 cups milk
    1 cup cooked rice
    2 eggs, beaten
    1/2 cup sugar
    1/2 cup raisins
    1 teaspoon vanilla
    1/2 teaspoon cinnamon

    Pour milk into a 4 cup measuring bowl. Microwave on High for 3 to 4 minutes or until steaming. Mix together remaining ingredients in a 2 quart casserole dish until well blended. Stir in hot milk. Cover with a tight fitting lid or plastic wrap. Microwave on low (30%) for 20 to 25 minutes or until a knife inserted near edge comes out clean. Remove cover immediately and allow to stand on a solid surface until center is set. Serve warm or cold. Serves 4 to 6. You can use either instant rice (Minute Rice) or the old-fashioned rice as long as it is already cooked.

    This recipe is easy to fix and very tasty. I love cinnamon and raisins.

  9. Thank you everyone! I found this recipe online last night:

    Leftover Rice Rice Pudding

    2 cups leftover cooked white rice
    3 cups milk (any kind)*
    1/2 cup sugar
    small pinch salt
    1/2 cup raisins
    1 teaspoon vanilla extract
    1/2 teaspoon cinnamon, optional
    pinch nutmeg, optional

    Combine cooked rice, milk, sugar and salt in a medium saucepan. Bring to a boil, then lower the heat to a simmer and stir in the vanilla and raisins. Cook until just about all of the milk is absorbed (30-45 minutes, depending on how absorbent your rice is). Stir in cinnamon and/or nutmeg, if using.
    Divide rice pudding into individual serving dishes serve warm or chilled.
    Makes 4-6 servings.

    And I tried that - it was ok, mostly jsut tasted like very sweet, milk rice rather than actual rice pudding but at least it used it up. We're off out to dinner tonight (nothing fancy) so I didn't want to leave the rice until Saturday to make anything savoury with it. But thansk for all the recipes, we always have left over rice so I'll definately keep them and try them all!
