  6. ROASTED ACORN SQUASH WITH CHILE VINAIGRETTE

    Ingredients
    2 (1 1/2 - to 1 3/4-lb) acorn squash
    1/2 teaspoon black pepper
    1 teaspoon salt
    6 tablespoons olive oil
    1 garlic clove
    1 1/2 tablespoons fresh lime juice, or to taste
    1 to 2 teaspoons finely chopped fresh hot red chile, including seeds
    2 tablespoons chopped fresh cilantro

    Preparation
    Put oven racks in upper and lower thirds of oven and preheat oven to 450°F. Halve squash lengthwise, then cut off and discard stem ends. Scoop out seeds and cut squash lengthwise into 3/4-inch-wide wedges. Toss squash with black pepper, 3/4 teaspoon salt, and 2 tablespoons oil in a bowl, then arrange, cut sides down, in 2 large shallow baking pans. Roast squash, switching position of pans halfway through roasting, until squash is tender and undersides of wedges are golden brown, 25 to 35 minutes.

    While squash roasts, mince garlic and mash to a paste with remaining 1/4 teaspoon salt. Transfer paste to a small bowl and whisk in lime juice, chile (to taste), cilantro, and remaining 1/4 cup oil until combined. Transfer squash, browned sides up, to a platter and drizzle with vinaigrette.

  8. It sounds good, huh? Of course, I don't think that I have ever met a squash that I didn't like. But with lime juice, cilantro and chili I don't think you could go wrong!

  13. Work too hard? Tough to do working 17 hrs a week! Horrible for my wallet, but I'm enjoying it for now!
    I'm working 4:30 - 9:00 right now and I'm bored as usual and can't wait to go home and have a glass of white wine with some cheese and crackers for a late dinner and hang out on TDK for a while.

    Seems I miss all the action around the gym. Apparently DTG got into it with a customer today, went into a roid rage, the client went and complained to Big Boss who threw him out of here. I was told that if DTG shows up, I have to call the police!
    Coming back here after two days off and after yesterday's sad news I realized what a terrible place this is and how unhappy I am working here. Instead of complaining of my hrs. getting cut, I'm going to make more plans to get out of here.

  14. Good for you, GD. Have you considered finding another part-time job while still working the 17 hrs. that you're already working? Maybe Panera? :)
    Find somewhere/something that you'll enjoy and then give them the 'heave-ho'! No one deserves to work in an atmosphere with so much dysfunction. I worked at the Starbuck's inside of a Barnes and Noble one summer just because I was bored and the extra money would come in handy. I met a lot of great people and got to drink a lot of mochas at the same time!

  16. If I remember correctly, you said the pay there isn't all that great anyway. At least find another part time job where the people or atmosphere don't bring you down. Plus, if you worked at Dunkin' Donuts or Panera, you'd be sufficiently caffeinated! ;)
