I haven't been around lately. I saw the thread with buddies and thought it funny. Trying to catch up I learned why the thread was started. I had so looked forward to all the help Renee was giving me to help my Thanksgiving dinner with my Dad go off without a hitch. When I read of the events I have spent the past few hours looking at her old posts and crying. Today it is almost like a piece of me, of TDK, is missing. Renee you were loved so much and will be missed more than words can say. My prayers are with your family. And I know there is one more angel in this world.
Cranberry Ring Mold
1 12 oz. bag cranberries,washed and chopped
1 20 oz. can crushed pineapple + juice
2 small packages of strawberry or cranberry jello*
2 cups boiling water
1/4 cup sugar or Nutrasweet**Dissolve jello in boiling water. Add sugar and stir until dissolved. Grind cranberries in a Blender, etc. using some juice from pineapple, if needed, add ground cranberries and pineapple with remaining juice to the remaining jello mixture. Spray a 6 cup or larger jello mold with cooking spray. Pour mixture into mold. Chill until firm. To unmold; dip mold into bowl of hot water for 3 to 4 seconds, then invert onto serving tray. *sugar-free jello can be substituted if you want it to be sugar-free. **If you use Nutrasweet, it takes 26 packages to equal 1/4 cup sugar. Tip: when I make this, a 6 cup mold is bursting at the seams, so a little bit bigger mold would be less chance of spilling it.

I, being a good Irish woman, pour a drink and toasted the heavens. They have the best. It was just such a shock to be gone a few days and now know that I can't ever tell her about the dinner, seems selfish that I want to tell her about a dinner, and her family would give anything to have her with them.

Gosh, I pop in for just a few minutes and now I am really hungry! Being a "Northerner" I don't get much good southern cooking. My sister-in-law has southern roots so she is a pretty fine cook. Here are some of her greens (made with bacon grease, of course!) And I do know how to make red velvet cake, so I'll bring that for dessert. I'll have a (very small) sip of bourbon to toast our departed friend. Goodbye Cindy Renee, thank you for sharing part of your life with us.

Emma I have raised a few glasses already. It may seem strange but in this house there is an Irish wake happening. I have shared recipes that Renee sent with my husband. We have looked at her beautiful cat. We have toasted a great person who shared life with so many people.
