I am thinking of getting a small block to give it a try. How can chocolate and cheddar be a bad thing????

Yes, Lainey's right - a portabello burger doesn't have any meat. Just a grilled portabello. I make a balsamic, olive oil and herb mixture to brush over it while grilling. When Mr. WWM and I have them we add cheese. But since she's a vegan we left off the cheese.

I had spinach and mushroom enchiladas with a poblano cream sauce at our MCW Austin meet-up. I think it was very similar to this one.
Poblano Cream Sauce
This recipe goes with Sesame-crusted Halibut with Poblano Cream Sauce
YieldMakes 2 1/3 cups
Ingredients* 6 poblano chiles
* 1 cup chicken broth
* 3/4 cup butter
* 1/2 (8-ounce) package cream cheese, softened
* 1/2 cup (2 ounces) shredded cheddar cheesePreparation
Place chiles on an aluminum foil-lined baking sheet. Broil chiles 3 inches from heat 8 to 10 minutes on each side or until charred. Place chiles in a heavy-duty, zip-top plastic bag; seal and let stand 10 minutes to loosen skins. Peel and seed chiles, discarding skins.
Combine chiles and broth in a blender or food processor; process until smooth.
Melt butter in a large skillet over medium heat, and stir in chile mixture. Add cream cheese and cheddar cheese, stirring constantly. Cook 2 to 3 minutes, stirring constantly, until cheeses melt.

Cream Cheese Crostata with Orange Marmalade
Ingredients
Crust
* 1 1/2 cups cake flour
* 4 1/2 tablespoons sugar
* 1/2 large egg yolk
* 9 tablespoons (1 stick plus 1 tablespoon) chilled unsalted butter, cut into 1/2-inch cubes* Nonstick vegetable oil spray
Filling
* 1 8-ounce package cream cheese, room temperature
* 3/4 cup mascarpone cheese
* 1/2 cup plus 1 tablespoon sugar
* 2/3 cup orange marmalade
* 1/2 cup sliced almonds, toastedFor crust:
Mix flour and sugar together on work surface. Make well in center of mixture; add egg yolk. Scatter butter cubes over flour mixture. Using hands, gently mix ingredients together until well blended and dough forms. Flatten dough into disk; wrap in plastic and chill at least 1 hour or overnight.Preheat oven to 400°F. Spray 9-inch-diameter tart pan with removable bottom with nonstick spray. Press dough onto bottom and up sides of prepared pan. Bake until golden brown and cooked through, pressing with back of fork if crust bubbles, about 18 minutes. Cool crust in pan on rack.
For filling:
Beat cream cheese, mascarpone cheese, and sugar in medium bowl until smooth. Spread filling evenly in cooled crust; chill 1 hour. Spread marmalade evenly over filling. Sprinkle almonds over. (Can be made 1 day ahead. Cover; chill.)And I probably shouldn't admit this, but I made this and put it in a purchased graham cracker crust. It was yummy!

OH I had cheese. FF took me to a Tapas restaurant, which I had never done before. He ordered two things he wanted and I ordered two things I wanted and then we shared. I ordered a goat cheese, tomato and artichoke spread over brushetta. YUM!

Apple and Walnuts with Stilton Cheese
Ingredients
* 6 ounces Stilton cheese
* 1 tablespoon extra-virgin olive oil
* 1 tablespoon red wine vinegar
* 2 tablespoons heavy cream
* 1 teaspoon freshly ground pepper
* 6 sweet eating apples, such as Braeburn, Gala or Red Delicious, unpeeled, cored and cut into 1/2-inch dice
* 4 celery stalks, thinly sliced, plus several whole celery leaves for garnish
* 2 tablespoons dried currants or raisins
* 1 tablespoon fresh lemon juice
* 1/2 cup coarsely chopped walnuts, toastedPreparation
Put one-third of the cheese in the bottom of a large bowl. Add the olive oil and, using a fork, mash together the cheese and oil. Add the vinegar and continue to mash and to mix. Add the cream and pepper and mix well to make a thick, chunky dressing.
Add the apples, sliced celery, currants and lemon juice to the dressing and mix well.
Crumble the remaining cheese and sprinkle it over the salad along with half the walnuts. Mix them into the salad gently and evenly.
Transfer the salad to a serving bowl and garnish with the remaining walnuts and the celery leaves. Serve immediately.

Roasted Pears with Stilton Cheese
Ingredients
* 3 ripe but firm anjou pears
* fresh lemon juice (3 lemons)
* 3 ounces coarsely crumbled sharp blue cheese such as Stilton cheese
* 1/4 cup dried cranberries
* 1/4 cup walnut halves, toasted and chopped
* 1/2 cup apple cider
* 3 tablespoons port wine
* 1/3 cup light brown sugar, lightly packed
* 1/4 cup olive oil
* 6 ounces baby arugula
* kosher saltDirections
Preheat the oven to 375 degrees F.
Peel the pears and slice them lengthwise into halves. With a small sharp paring knife and a melon baller, remove the core and seeds from each pear, leaving a round well for the filling. Trim a small slice away from the rounded sides of each pear half so that they will sit in the baking dish without wobbling. Toss the pears with some lemon juice to prevent them from turning brown. Arrange them, core side up, in a baking dish large enough to hold the pears snugly.
Gently toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation.
In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature.
Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula among 6 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt, and serve warm.
