  1. I am crazy about these night before dishes. We've been riding bikes with a friend on Saturdays and so I make one of these the night before. Then when we set out on our ride I set the oven to come on while we're gone. When we all get home, breakfast is ready. And they are lifesavers during the holidays or when you have overnight guests.

  2. I make these to serve with (what else?) martinis!

    CHEDDAR CHEESE COOKIES

    1 3/4 sticks butter, softened
    1/2 lb. sharp Cheddar cheese, grated
    2 1/2 c. flour
    1 tsp. salt
    1/2 tsp. paprika
    1/4 tsp. dry mustard
    1/4 tsp. red pepper
    1 or 2 tbsp. warm water to make dough stick together (if necessary)

    Cream butter and add other ingredients. Roll out to 1/2 inch thickness on waxed paper or lightly floured board. Cut with center of doughnut cutter or in square or diamond shapes, about 1 inch in size. Bake at 325 degrees for 20 minutes until golden, not brown.

  3. CREAM CHEESE SUGAR COOKIES

    1 c. sugar
    1 c. butter, softened
    3 oz. pkg. cream cheese, softened
    1/2 tsp. salt
    1/2 tsp. almond extract
    1/2 tsp. vanilla
    1 egg yolk (reserve white)
    2 1/3 c. flour

    In large bowl combine sugar, butter, cream cheese, salt, almond extract, vanilla and egg yolk; blend well. Lightly spoon flour into measuring cup, level off. Stir in flour until well blended. Chill dough 2 hours.

    Heat oven to 375 degrees. On lightly floured surface, roll out dough one third at a time, to 1/8" thickness. Cut into desired shapes with lightly floured cookie cutters. Place 1" apart on ungreased cookie sheets. Leave cookie plain, or if desired, brush with lightly beaten egg white and sprinkle with colored sugar.

    Bake at 375 degrees for 7 to 10 minutes or until lightly browned, golden. Cool completely. Frost and decorate plain cookies if desired. 5 to 6 dozen cookies. This is a good holiday cookie recipe.

    Loaded Baked Potato Soup

    Serves: 2-4

    2 cups chicken broth
    3 med. potatoes - peeled, cubed
    2 green onions - trimmed, sliced
    1/2 rib celery - minced
    1/4 med. carrot - grated
    2 tsp. distilled white vinegar
    1 tsp. salt
    1 1/2 cups milk mixed with 2 Tbls. all-purpose flour
    1/4 cup shredded cheddar cheese
    1/4 cup shredded Monterey Jack cheese
    2-6 strips cooked bacon - crumbled

    -Bring first 7 ingredients to boil in a saucepan over medium-high heat. Cover and simmer over medium-low heat for 20 minutes, stirring occasionally.
    -Whisk the milk/flour mixture into the soup, then stir in cheese and bacon.
    -Simmer, uncovered, 5-8 minutes, or until thick, stirring constantly.

  11. Midweek Cheese Bump to counter balance with the Vegemite thread! How about some nice cheese & crackers or on toast as grilled cheese even on french onion soup! Any cheese will do! Just don't substitue it with that other stuff!

  12. I don't really advocate using Cheez Whiz, but I think that it was mentioned on the other thread. So just in case you're thinking about it, you might as well make something yummy.

    Super Skins

    6 baking potatoes (2 lb./1 kg), baked
    2 Tbsp. oil
    1 cup CHEEZ WHIZ Process Cheese Product
    1/4 cup OSCAR MAYER Real Bacon Bits
    1/4 cup sour cream
    2 green onions, sliced

    HEAT oven to 375°F. Cut potatoes in half lengthwise; scoop out centres, leaving 1/4-inch-thick shells. (Reserve centers for another use.) Cut shells crosswise in half.

    PLACE shells, skin-sides down, on baking sheet; brush insides with oil. Bake 15 min. or until golden brown

    MICROWAVE Cheez Whiz in microwaveable bowl on HIGH 3 min, stirring after 1-1/2 min. Pour into potato shells; top with remaining ingredients.

    Prepare as directed, substituting frozen waffle fries or french fries for the baked potato shells. Bake fries as directed on package. Place on serving plate. Serve topped with remaining ingredients.

  16. Martha Stewart’s Macaroni And Cheese

    8 Tablespoons (1 stick) unsalted butter, plus more for dish
    6 slices good white bread, crusts removed, torn into 1/4 to 1/2 inch pieces

    5 1/2 cups milk
    1/2 cup all purpose flour
    2 tsp. salt
    1/4 tsp. freshly grated nutmeg (maybe?)
    1/4 tsp. freshly ground black pepper
    1/4 tsp. cayenne pepper, or to taste (1/8 tsp.)
    (1 tsp. dry mustard, maybe 1 1/2 tsp.)
    4 1/2 cups (about 18 oz.) grated sharp white cheddar cheese
    2 cups (about 8 oz.) grated Gruyere or 1 1/4 grated Pecorino Romano cheese
    1 lb. elbow macaroni

    Heat oven to 375 degrees. Butter a 3 quart casserole dish; set aside.

    Place the bread in a medium bowl. In a small saucepan over medium heat, melt 2 tablespoons butter. Pour butter into bowl with bread and toss. Set the bread aside.

    In a medium saucepan set over medium heat, heat the milk.

    Melt remaining 6 tablespoons butter in a high sided skillet over medium heat. When butter bubbles, add flour. Cook, stirring, 1 minute. While whisking, slowly pour in hot milk. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick. Remove pan from heat. Stir in salt, nutmeg, black pepper, cayenne pepper, 3 cups cheddar cheese and 1 1/2 cups Gruyere or 1 cup Pecorino Romano; set cheese sauce aside.

    Fill a large saucepan with water; bring to a boil. Add macaroni; cook 2 to 3 minutes less than manufacturer’s directions, until the outside of the pasta is cooked and the inside is underdone. (Different brands of macaroni cook at different rates; be sure to read the instructions.) Transfer the macaroni to a colander, rinse under cold running water, and drain well.

    Stir macaroni into the reserved cheese sauce. Pour mixture into prepared dish. Sprinkle remaining 1 1/2 cups cheddar cheese, 1/2 cup Gruyere or 1/4 cup Pecorino Romano and bread crumbs over top.

    Bake until browned on top, about 30 minutes. Transfer dish to wire rack to cool 5 minutes. Serve.
