Cheese you say?

  1. Thanks to ILMC request for casserole recipes the other day I started to look up some. I never think of cooking casseroles. I came across a recipe for macaroni and cheese. Now this may seem strange because macaroni & cheese is not exactly a delicacy but I have never had proper macaroni & cheese. I think I tried the stuff in a box once and hated it. I love cheese and I love macaroni and it occurred to me that maybe the homemade kind is a lot better. It was absolutely delicious. It will now become a staple for me. It had the usual macaroni and cheese (old cheddar) but it also had bacon, onion, garlic and the combination made a wonderful comforting food. So if anyone doesn't know what to make for dinner you might want to try a variation of your old macaroni and cheese recipes. Thanks ILMC. I would never have tried if you didn't ask for casserole. I never did find any good casserole recipes.

  2. MMMMM Mac and Cheese! I make a traditional french white sauce and add a ton of cheese and pour it over macaroni. The bacon part sounds great too!

  3. Yes Kykat I made a white sauce as well and then melted the cheese into it and although the recipe called for bacon that you fry and then crumble over the top and put in the oven. I didn't have any bacon but I had some ground pork. Not sure if that made much difference in taste from the bacon but it sure was good. It also called for 3 kinds of cheese but I only had Old Cheddar and it worked fine.

  4. Hummm...I love macaroni and cheese...I have found several recipes for making it different ways but haven't had a chance to try them yet. I didn't realize there was so many ways to cook it!! But one thing for sure you got to have lots of cheese!!!!

  7. CM the recipe I had is pretty easy. You cook the macaroni al dente, then make up a sauce of milk and cheese, fry up bacon/onions throw it all in a casserole and stick it in the over at 350 for about 30 minutes (I think). I will look up the recipe for you and post it here.

  9. Here's a sure to please recipe!
    Mandy's grams Italian Mac. and cheese!
    1 box elbow noodles cooked
    1 pound shredded cheese(sharp cheddar and swiss are the best)
    1 16 oz can stewed tomatoes
    4 eggs + milk to make 3 cups(Whisked together)
    scallions chopped(I use a whole bunch)
    salt and pepper to taste

    Preheat oven to 400*
    Mix elbows, stewed tomatoes, scallions, salt and pepper, with 3/4 pound of cheese together. put in 9 by 13" baking pan. pour egg milk mixture over top and remaining cheese. Bake for 10 minutes at 400* then lower oven temp to 350* and cook for another 30 minutes(Possibly longer until the milk. egg mixture is absorbed) The edges will be browned!

    This is a favorite of my family and i'm asked to make it all the time!

  11. I agree that mac and cheese is a comfort food. Unfortunately, I rarely take the time to fix it from scratch. But I am sure tempted by the thought of the taste of homemade mac and cheese.

  12. Mac & Cheese is my ultimate comfort food. I have the instant stuff at work, not that great, but it does the job. I keep boxes of it at home, but it's the best made from scratch. I use Velveeta; it melts really well. The best part is that you can make it into a caserole as it goes with just about everything. I've thrown in diced ham and diced tomatoes and even cooked ground beef - that makes it sort of a cheeseburger caserole.
    Ok, I haven't eaten anything yet today and starting to drool at my desk...

  13. Cheeseburger casserole??? OMG, that sounds so good!!! I ate breakfast at 7:30 and now I am hungry again. Reading that, makes me want a cheeseburger casserole :)

  15. Oh, if you want to make the instant or boxed mac & cheese better, just add a bit of milk, a pat of butter and some cheese :)

When I lived in Alabama, people would make the mac and cheese with an egg, milk and cheese mixture that would set up like a custard when baked, but I never found out the exact recipe and procedure. If I am in a hurry and make the boxed kind I always add a little extra milk and a lot of extra cheese. Next time, I am adding bacon!
