  2. I'm making a pot of chicken stock and was wondering if I should simmer it with the lid off or the lid on the pot. I haven't made it in quite a while and I don't remember.

  5. On. Oh. *Gets up to put the lid back on the pot* I was wrongly assuming I was letting the water evaporate to concentrate the flavors. All I was doing was letting all that wonderful flavor out the windows. Thanks AV. When are you starting cooking class? I need to sign up.

  6. If you are reducing something, you leave the lid off... that way it "reduces" the liquid, and you're left with a thicker sauce..

    In a stock, you leave the lid on and simmer low for a long time, so that the condensation goes back into the stock, and the liquid doesn't get lost.

    Either way, you're concentrating the flavors :)

  7. I do simmer stocks with the lid on. But I'll bet that the Kitchen Police won't come get you if it is off!

    Joan, I have some silicone muffin pans. I was skeptical at first but I like them. You can just push on the bottom and the muffins tumble right out.

    CM, I'm so sorry about the car. I got a new emergency brake for Christmas on our Tahoe! We don't even use the stupid emergency brake and the repair guy said that's why it wore out! He said it was a serious flaw in the Chevrolet design. And that's why GM is in trouble. We will never buy another American car. I wonder how I will look wearing my emergency brake on Christmas?

    Miu, I'm so sorry about your sore throat. Metsa said that she is sick, too.

    Mr. WWM has been trying to figure out my sign-in problem all morning and he is now pretty cranky. It seems to be a problem with my browser because I'm having to sign onto it everyday, too. And it started at the same time. I'm clueless when it comes to computers so either he'll have to figure it out or I'll just have to sign on every day.

  9. Yeah GD!! Congrats. Glad the weather didn't hamper your game.

    WWM, The car with all the issues is a Mercury. Our Hyundai has been wonderful and we would buy one again in a heartbeat. I am just glad we have one good reliable car. I guess it just irks me that we HAVE to get it fixed, we have no choice..so they have us by the short hairs.

    AV, you and WWM have to come to Ohio after the baby is born so you can cook for me and the family. I can freeze all the goodies then Wayne can heat them up. That is one thing he is good at in the kitchen :)

  11. hummmmm....maybe another virtural road trip is in order LOL! Keep us posted, we'll be on stand by......runs in closet and comes out with a "to go" suitcase..... stashs a couple of bermuda shorts, 4 pairs of black socks and a few Hawaiian shirts in the bag (oh, and the extra pair of pink sunglasses!!).... ready and waiting!!!!

    Hey CM, we can at least give you some simple receipes that Mr. CM can make!! I send you a few between now and the time!!!

  12. Hello to those still at the cafe. It feels a little chilly in the office, so I could use a warm cup of tea to get me through the next couple of hours. Then I'm heading for home and the kitties.
    Even when I have time to cook, I don't enjoy cooking anymore. CM, when AV and WWM are finished cooking for you, they can take a detour to Iowa and do some for me.

  13. WWM, you still here? LOL at the emergency brake for Christmas! Many years ago I had a Camaro and my boyfriend/now husband gave me a rear spoiler. One guy at work asked me to turn around so he could see it. Walked right into that one! Ah, to be young and stupid!

  14. Just back, Joan. I had to go and mail the boxes to my Marine. He won't get them for Christmas but it will be close.

    I'm thinking of hot gluing some sequins to my emergency brake just to jazz it up a little bit. And I'm very curious to see how Mr. WWM will manage to get it in my stocking.

    *throws Calphalon cookware in a bag and waits to be summoned along with AV to CM's house*

  15. lol WWM @ brake in your stocking and by the way you can come anytime!! I need help with new recipes anyway...I have chicken breasts I want to make but I don't feel like frying them up.
    How can I bake chicken breasts with some flavor? I can't make them too out there since Maddie has to eat it too so it has to be more chickeny than flavor...does that make sense???? I know there is shake and bake..but I would like to try not coating them in that...does this make any sense???

  16. Years ago I used to make a base of white rice mixed with cream of mushroom (or cream of chicken if you prefer) soup. I would put that in a baking pan and put chicken breasts snuggled into the rice. Then bake until chicken breasts done. My son ate it sometimes, but he didn't like chicken when he was little.

  17. LK, we used to make that dish when I was a kid! We used Cream of Mushroom and a dash of Worcestershire. It was delicious.

  18. I still make that occasionally but use cream of chicken soup. Wayne is not a big fan though. I like it.
