Does anyone have a really good Chicken Tetrazzini recipe they could share?
I have a few that I have printed off the internet but not sure which one I would want to use. This is what I am planning to have for Christmas and I need to feed about 25 people. I also thought of serving a green salad and hot rolls. Any suggestions for side dishes that would work with it.

ILMC, I know making homemade stock seems like a pain in the ..well, you know. But it's worth it. In a pinch you could use a very good quality purchased stock.
Chicken (or Turkey) Tetrazzini
yield: Makes 6 servings
Ingredients
* 1 to 1 1/2 pound chicken bones (from 2 cooked chickens), broken into 2- to 3-inch pieces
* 4 cups low-sodium chicken broth
* 1 carrot, thinly sliced
* 1 medium onion, coarsely chopped
* 2 celery ribs, cut into 1-inch pieces
* 2 garlic cloves, smashed
* 5 whole black peppercorns
* 1 Turkish or 1/2 California bay leaf
* 2 whole cloves
* 3/4 stick (6 tablespoons) unsalted butter
* 3/4 pound mushrooms, thinly sliced
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 tablespoons all-purpose flour
* 1 cup heavy cream (don't substitute!!! Use heavy cream)
* 3 tablespoons medium-dry Sherry (I use a bit more. Maybe 4 Tbl)
* 1/2 lb spaghetti
* 2 pounds chicken meat (from 2 cooked chickens), torn into 1-inch pieces
* 1 ounce freshly grated Parmigiano-Reggiano (1/2 cup)Preparation
Bring chicken bones, broth, carrot, onion, celery, garlic, peppercorns, bay leaf, and cloves to a boil in a 3- to 4-quart heavy saucepan, then simmer, partially covered, skimming froth, 30 minutes.
Pour stock through a large sieve into a bowl, discarding solids, and return to saucepan. Measure stock: If more than 2 cups, boil until reduced. Keep warm, covered.
Put oven rack in middle position and preheat oven to 350°F. Butter a shallow 3-quart glass or ceramic baking dish.
Heat 3 tablespoons butter in a large heavy skillet over moderately high heat until foam subsides, then sauté mushrooms with 1/4 teaspoon salt and 1/8 teaspoon pepper, stirring, until liquid mushrooms give off is evaporated and mushrooms begin to turn golden, about 8 minutes.
Melt remaining 3 tablespoons butter in a 2- to 3-quart heavy saucepan over low heat, then add flour and cook roux, whisking, 3 minutes. Add warm stock in a fast stream, whisking constantly, and bring to a boil. Reduce heat and simmer, whisking occasionally, 5 minutes. Add cream, Sherry, remaining 1/4 teaspoon salt, and remaining 1/8 teaspoon pepper and simmer over low heat, whisking occasionally, 10 minutes.
Cook spaghetti in a large pot of >boiling salted water until al dente, then drain well.
Toss together spaghetti, mushrooms, and half of sauce in a large bowl, then transfer to baking dish. Stir together chicken meat and remaining sauce in same large bowl. Make a depression in spaghetti, then spoon chicken into it and sprinkle dish with cheese.
Bake until sauce is bubbling and top is lightly browned, about 30 minutes. Serve immediately.

Yum! WWM! My receipe is similar, I add sliced water chestnuts to mine for a nice crunch, but the basic ingredients are the same!
If you're going to feed 25 people, I'd make at least two casseroles, maybe three - depending on how big eaters they are!
I've got a great receipe for a really great coleslaw that I had the other day at a friends house. Let me go get it, I think that would go wonderfully with the tetrazinni..... be right back! -
Ok, here it is : I like this receipe because it can sit out (no mayo)
SWEET & CRUNCHY COLESLAW:
1 bag of angle hair shredded cabbage
1 bunch green onions chopped
1 cup toasted slivered almonds
1/2 cup toasted sesame seeds
2 pkg. "oriental" flavored ramen noodlesDressing:
1/4 cup seasoned rice wine vinegar
3/4 tablespoon sugar
1 tsp. salt
1/2 tsp. freshly ground black pepper
1/2 cup vegetable oilIf you don't buy them already toasted, toast almonds & sesame seeds on stove top in a non-stick skillet until brown.
Wipe skillet, add 1 pat butter and break ramen noodles into skillet - toast these until just slightly brown - keep a careful eye, they will burn quickly!!Mix cabbage, onion, almonds, & sesame seeds in a large salad bowl.
Put crunchy noodles on top just before you're ready to dress & serve.
Wisk rice vinegar, sugar, oil, salt, pepper & 1 pkg. oriental flavoring from noodles - dress & serve!!
You can have a couple of bowls of the cabbage/onion/nut mixture waiting, then when you're ready to replinish - put crunchy noodles & dressing on!

ILMC--my mother makes the best garlic bread. She uses either hot dog or hamburger buns, butters them and then sprinkles them with parmesean cheese and garlic powder. Put them under the broiler until ready--YUM!!

How about a nice apple crisp? Easy to do and great for this time of year. I would serve it with either vanilla ice cream or whipped cream with just a little touch of rum in it.
Apple Crisp
INGREDIENTS
* 2 cups all-purpose flour
* 2 cups rolled oats
* 1 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1 1/2 cups packed brown sugar
* 1 1/2 cups butter
* 2 quarts peeled, cored and sliced applesDIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine the flour, oatmeal, cinnamon, nutmeg and brown sugar. Cut butter into mixture until crumbly.
3. Take half of the mixture and pat it into the bottom of a 9x13 inch baking dish.
4. Cover crumb mixture with apple slices, then sprinkle apple slices with remaining crumb mixture.

Wow!!! Gone for a little while and my menu is planned!! Thanks for the recipes. It all sounds wonderful!! Yes...I will gladly set 3 more places!!
One question. Yes, yes, and double yes!!!! That's the beauty about that tetrazinni dish - you can always make it the day before. You can also toast the almonds, sesamee nuts & raman noodles for the coleslaw the day before, - just let them cool, and store them on a shelf in an air tight ziplock baggie - make your dressing that morning, and it can sit out on the counter til your're ready to put it all together! A snap!, that way you can enjoy your friends, family & party!!

ILMC, just be certain that you get the casserole out of the refrigerator in plenty of time to come to room temperature. Especially if it is in a glass 9X13. (Do you want to know how I learned that is very important? Can you say "exploding pyrex dish in the oven"?)
You can do the apple crisp ahead of time, too. Then after you take the casserole out of the oven for dinner, just turn the oven off and put the apple crisp in. It will be nice and warm.

ILMC......Re: Tetrazzini....... I add finely chopped pimentos to the white sauce,(the roasted kind in a jar). Don't go overboard, just enough to add a spark of color. Also, I scatter toasted silvered almonds on top of the casserole. P.S.... Make your stock now, and freeze in containers.

WWM.... Good advice about the pyrex. I too have been a victim of the exploding pyrex dish...... it is not pretty!!!! I now will set the dish on a cookie sheet before it goes in the oven.

Didn't know the pryex would explode....really good info to have especially when trying to impress the family!!!! It's ashame that everyone can't take a road trip at Christmas and come share this meal that ya'll helped me put together!!
