We had some frozen blueberries left from last summer and I wanted to use them somehow before they got too old. Found a cobbler recipe and although I am not much of a cook we gave it a try. Yummm, with a little Hagendaz vanilla-honey ice cream, oh my. And it was easy!
Preheat oven to 375 degrees. Grease a 13x9 pan. Boil a couple cups of water.
Mix together on low speed until smooth:
2 cups flour
1/2 cup sugar
4 tsp. baking powder
2 tsp. melted butter
1/2 tsp. salt
1 cup milk
2 tsp. vanilla
Put mixture in pan spreading it evenly across the bottom. Spread 16 to 20 oz of frozen or fresh blueberries across the dough. Sprinkle 3/4 cup sugar evenly over mixture. Gently pour 1 and 1/2 cups of boiling water over everything, do not stir or mix.
Bake in preheated oven for 30 minutes. Remove from oven and let cool. When you can't wait any longer because it smells SOO Wonderful, scoop some out and put ice cream over it and scarf it!
