Yummm - Blueberry Cobbler

  1. We had some frozen blueberries left from last summer and I wanted to use them somehow before they got too old. Found a cobbler recipe and although I am not much of a cook we gave it a try. Yummm, with a little Hagendaz vanilla-honey ice cream, oh my. And it was easy!

    Preheat oven to 375 degrees. Grease a 13x9 pan. Boil a couple cups of water.

    Mix together on low speed until smooth:
    2 cups flour
    1/2 cup sugar
    4 tsp. baking powder
    2 tsp. melted butter
    1/2 tsp. salt
    1 cup milk
    2 tsp. vanilla

    Put mixture in pan spreading it evenly across the bottom. Spread 16 to 20 oz of frozen or fresh blueberries across the dough. Sprinkle 3/4 cup sugar evenly over mixture. Gently pour 1 and 1/2 cups of boiling water over everything, do not stir or mix.

    Bake in preheated oven for 30 minutes. Remove from oven and let cool. When you can't wait any longer because it smells SOO Wonderful, scoop some out and put ice cream over it and scarf it!

  4. The only other thing I would say about it that surprised me was the dough was very sticky and seemed to "set up" quickly. I was beating it with a hand beater and it gummed it up pretty quickly. Spreading it out wasn't too easy either though a spatula helped. It looked "wet" when it came out of the oven, but it was browned. When it had sat long enough to be still warm but not hot it had absorbed all the liquid. It was delish and I only need ten other people to come over and help eat the dish of it!

  5. I forgot to add one other important note about this recipe -- don't have a kitten on your lap when the timer goes off -- it leaves scratches!

  7. I have a question. Is the amount of sugar 1/2 cup (as in the list of ingredients) or 3/4 cups as in the body of the directions? I guess you can't have too much sugar! :)

  8. It is a total of 1 and a quarter cups. The first half cup gets mixed into the dry ingredients, the second 3/4 cup gets sprinkled on top before you pour the water. I think the first sweetens the bread and the second helps make a little sauce around the berries.
