ALMOST DINNER TIME - WHAT'S ON YOUR TABLE TONIGHT???

  1. Since there's just two humans in this house, I cut the dinners I get at CostCo in half and freeze the second half. They have a great pork roast stuffed with spinach and a turkey roast stuffed with dressing and cranberries. By the time I pull the second half out of the freezer, hubby has forgotten it. Whip up a salad and some cous-cous or some steamed vegetables and he thinks I've slaved all day making him a meal.

    Of course, the pizza guy does his fair share of providing meals as well. And I'm not above making waffles and sausage and claiming it's dinner.

    Tonight though, he's getting pork roast, salad and Chinese peas with almonds. And I get to watch a new NCIS. If I could be 100% positive that Jethro Gibbs would come over to investigate, I would probably be willing to do bodily harm to a Navy dude.

  2. I first roast the red pepper brushed very lightly or sprayed with olive oil and sprinkled with black pepper for about 15-20 minutes. The stuffing is hamburger, cream of mushroom soup (healthy request), brown rice (sometimes saffron rice), chopped fresh mushroom, and colby jack cheese. Stuff the peppers and roast for 20-25 minutes. Simple and not much to them, but it is tasty.

  3. we are having home made turkey soup . i made it during the holidays and froze it. choclate cake for dessert. we are having sandwhiches with our soup. tommrow night i will make a salad and cook some salmon.

  4. Ya really can't go wrong with beer & chilli!!! :)

    Peppers are typically stuffed with (browned) ground meat (beef, chicken, lamb, pork would work), onions, peppers, garlic, grated cheese ( a little parmasean typically) and spices.... you can vary it depending it on your taste, but then bake them for about 30-45 min. and they are delicious!....... assuming of course that you have roasted your peppers first..... (cold raw peppers wouldn't work here)! :)

  6. I do brown the hamburger, but I don't take off the skin. The skin doesn't bother me so I just leave it. It would be easy enough to peel off though.

  8. Well I will be glued to the TV for the Super Bowl this year. I have been a Steelers fan longer than I could walk. I am hoping this will be Super Bowl win number 6! I know there are many others Ron that will be with you for sure! Teaser is my football loving cat--okay she just likes the Steelers hat to sleep in!

LOL!!!! ...... looking forward to the "foodie" postings!! super bowl does bring out good food in all of us!!! I hope you join us!

  10. We are having kebabs of marinaded beef with yellow zucchini,red onions,button mushrooms & cherry tomatoes on freshly pruned Rosemary skewers, with corn on the cob and salad greens, followed by fresh fruit salad of blue,straw,goose & kiwi berries with organic bush honey yoghurt.

  13. I don't know how you guys do it. I don't feel like eating or cooking when I've finished workingazzzzzzzzzzzzzz (that was Jasper's contribution). Tonight I ate the last portion of tuna bake pasta I'd made ages ago and stuck in the freezer. Goodness knows what I'll do tomorrow (well, I'll have to go shopping for one thing. There aren't even any potatoes left...)

  14. We'll both be shopping tomorrow then Jcat, the cupboard is a tad bare here too. I made the kebabs this afternoon while I still had the enthusiasm for them. I got the idea from a gardening magazine I was given this afternoon. It has quite a few great looking recipes in it, like making bread in terracotta plant pots, some great looking focaccia and other herb related recipes.

  15. Mmmm, I love focaccia, make it in my breadmaker. We'll delete the time I once covered it in hebe leaves, thinking they were a herb like rosemary (well, it was right next to the rosemary plant so I did a herby hebe mix...)

    The plant pots SOUND good but can you imagine scrubbing them out?

  16. You don't need to do that much scrubbing if you oil them properly and use a hot oven. Fill the water drain hole with scrunched up tinfoil.

  18. The plant pot bread uses any bread recipe on it's second rise and only half fill the pots. First you must generously oil the pots inside and out and bake the empty pot at 200C for 15-20 mins. Must be to season the pot.
