St David's Day Night Shift

  1. I know it's early yet in some parts of the world, but in UK (the home of the Kittenmaster) it is nearly bed-time, so I declare the night-shift open. Food and drink of every variety available to all, plus nocturnal kitties for any who want a cuddle.

  14. I tried it all when I was in Scotland and the UK... Tatties are potatoes, haggis is minced sheep mean (I think the livers and hearts) that are cooked with oats and onions, and done in the intestine skins, kinda like you would sausage... am I right PM? It's an acquired tasts, but I liked them. I tried them several places, but the ones I liked best had a really good gravey.

  16. I had my free Quizno's sub for dinner...Tuscan turkey...really good! Now how about something like rice pudding or chocolate pudding or butterscotch pudding? Yeah, I guess I have pudding on the brain. And does anyone else prefer their pudding warm? So comforting!

  22. Here is a really easy and delicious recipe I use for butterscotch pudding. I have used half and half, as well...but the evaporated milk still tastes better, I think. You guys are a bad influence because I am going to make some tonight!

  24. Here you go, KW. And please don't mention calories to me. I make these for special occasions.

    Chocolate Lava Cakes with Coffee Custard Sauce

    Ingredients

    * 6 1/2 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
    * 3 tablespoons unsalted butter
    * Pinch of salt

    * 4 large egg yolks
    * 4 tablespoons sugar
    * 2 large egg whites

    * Coffee Custard Sauce
    * Whipped cream (optional)

    Preparation

    Preheat oven to 425° F. Butter four 3/4-cup custard cups. Dust with flour; shake out excess. Combine chocolate, butter and salt in top of double boiler set over simmering water. Stir until chocolate is melted and mixture is smooth. Remove from over water. Cool 10 minutes.

    Beat egg yolks and 3 tablespoons sugar in large bowl until thick and light, about 2 minutes. Fold in chocolate mixture. Using electric mixer fitted with clean, dry beaters, beat egg whites and 1 tablespoon sugar in medium bowl until stiff but not dry. Gently fold whites into chocolate mixture in 3 additions. Divide batter among prepared cups.

    Place custard cups on baking sheet. Bake until cakes are puffed but still soft in center, about 11 minutes. Transfer baking sheet to rack; cool cakes 1 minute.

    Using small knife, cut around sides of cakes to loosen. Place plates on top of cups. Invert cakes onto plates; remove cups. Spoon Coffee Custard Sauce around cakes. Top with whipped cream, if desired.

    Coffee Custard Sauce

    Ingredients

    * 3 large egg yolks
    * 1/4 cup sugar
    * 1 cup whipping cream
    * 1 teaspoon instant coffee powder
    * 1 1/2 teaspoons coarsely ground espresso beans

    Preparation

    Beat yolks and sugar in medium bowl until thick and light yellow, about 2 minutes. Bring cream to simmer in heavy medium saucepan. Gradually whisk hot cream into yolk mixture. Return mixture to same saucepan. Stir over medium-low heat until sauce thickens and leaves path on back of spoon when finger is drawn across, about 3 minutes (do not boil). Strain mixture into clean medium bowl. Add coffee powder; stir until dissolved. Stir in ground espresso beans. Refrigerate until cold, whisking occasionally, about 1 hour. (Sauce can be prepared 1 day ahead. Cover and keep refrigerated.)

  26. Hi all, back from making dinner! Good clean out of the old fridge tonite! Sunday is left overs for us, and I love it because (1, I don't have to cook) and we get a smorgasboard of all the yummies from the last few days. Plus, I hate to waste good food! Son got home from DC, packed up (skunk and all), but his car battery was dead! :( AAA later, and he's on his way... please say an extra prayer that he gets back to UF safely! The AAA guy said his car was fine, just left a light on or something, but you know how us Moms worry! Chocolate pudding cake 'eh? Daughter would love that, she loves anything chocolate!!!
