SPAM (!!) Among Products Doing Well in Recession

Maybe we should have a Spam recipe contest here on TDK! The most inventive use of Spam wins. I don't want to be the judge, though (I hate Spam!). Maybe Bobby would volunteer?

Spam Empanadas
1 pound Spam, with yucky gelatin layer removed and then ground or finely chopped
1/4 cup chopped onion
4 tablespoons Bisquick
1/2 teaspoon salt
2 cloves minced garlic
1 cup ketchup
4 tablespoons sour cream
1 1/2 cups Bisquick
1/3 cup water
1/2 cup grated cheeseCook the Spam and the onions until the onions are soft and slightly browned. Stir in 4 tablespoons Bisquick, salt, garlic, ketchup, sour cream and cheese. Heat through.
Stir 1 1/2 cups Bisquick and water to a soft dough, turn onto floured cloth-covered board. Knead. Roll out dough and cut into 3-inch diameter circles. Place 1 to 1 1/2 teaspoons Spam mixture on each circle, fold over and seal. Prick holes with fork into each turnover. Place on ungreased cookie sheet and bake at 400 degrees F for 15 to 20 minutes.
Serve with tomatillo salsa.
Tomatillo Salsa Verde
To cook the tomatillos, you can either roast them in the oven, or boil them. Roasting will deliver more flavor; boiling may be faster and use less energy. Either way works, though boiling is a more common way to cook the tomatillos.
Ingredients* 1 1/2 lb tomatillos
* 1/2 cup chopped white onion
* 1/2 cup cilantro leaves
* 1 Tbsp fresh lime juice
* 1/4 teaspoon sugar
* 2 Jalapeño peppers OR 2 serrano peppers, stemmed, seeded and chopped
* Salt to tasteMethod
1 Remove papery husks from tomatillos and rinse well.
2a Roasting method Cut in half and place cut side down on a foil-lined baking sheet. Place under a broiler for about 5-7 minutes to lightly blacken the skin.
2b Boiling method Place tomatillos in a saucepan, cover with water. Bring to a boil and simmer for 5 minutes. Remove tomatillos with a slotted spoon.
2 Place tomatillos, lime juice, onions, cilantro, chili peppers, sugar in a food processor (or blender) and pulse until all ingredients are finely chopped and mixed. Season to taste with salt. Cool in refrigerator.

Oh, well... I adapted a recipe to force it to use spam. Actually, the recipe calls for ground beef!

Spam Teriyaki Burgers
1 can of Spam with disgusting gelatin, slimy stuff wiped off and sliced into 1/2" slices
1 fresh pineapple, peeled, cored and cut into slices
1/2 tsp ground ginger
cayenne pepper
2 red bell peppers, seeded and cored and cut into quarters
watercress
alfalfa sprouts
bottled teriyaki sauce
ciabatta rollsSprinkle Spam with ginger to taste. Brush disgusting slabs of Spam with teriyaki sauce and place on grill. Best to char them to death, but at best get nice grill marks on the Spam.
Sprinkle fresh pineapple slices with cayenne pepper to taste and grill until caramelized.
Grill red pepper quarters until nicely charred.
Assemble burgers with Spam, a slice of grilled pineapple, a quarter of grilled pepper, watercress and alfalfa sprouts. Brush ciabatta rolls with Hawaiian mayo to taste.
Hawaiian Mayonnaise
1/2 cup mayonnaise
2 Tbs finely chopped pineapple
1 tsp ground ginger
1 tsp low sodium soy sauce

.....let's see.... a Spam-off!..... how fun... we're on!....
Pea and Bean Salsa with Spam
1 small can leseur petite green peas (drained)
1 small can French style green beans (drained)
1 small can white corn (drained)
1 small can black beans (rinsed and drained)
½ cup chopped onion
1 cup crumbled feta cheese
4 green spring onions chopped
2 tlb. Fresh parsley or cilantro (depending on your taste)
1 can of spam, drained, cubed and browned in olive oilDressing:
¼ cup rice wine vinegar
½ cup vegetable oil
3 -4 tlb. Sugar
1 tsp salt
½ tsp pepper
¼ tsp garlic powderMix altogether and serve with corn chips. If you want to make it spicey, you can add tobasco and/or chopped jalepenos.

Spam Hash and Eggs
1 can of Spam, with nasty, sticky stuff wiped off and burned. Chop Spam into smallish cubes
8 small, red potatoes boiled with skins on. Drain, cool and cut into about the same size cubes as the nasty Spam
fresh rosemary leaves
EVOO (as that sometimes irritating cook is prone to saying)
salt, pepper to taste.
8 eggs
Shredded cheddar cheesePreheat oven to 350 degrees.
Saute the Spam, new potatoes and rosemary in olive oil until nicely browned. Season with salt and pepper to taste. Place Spam hash in four individual ramekin dishes that are oven proof. Make two "wells" in the hash in each ramekin. Carefully break one egg into each well.
Place ramekins on a cookie sheet and place in oven. Bake until eggs are set to preferred doneness, approximately 10 minutes. Sprinkle with cheese and run under the broiler just to melt.

Spamstradda:
1 can spam, drained, de-gunked, cubed and browned in EVOO
6 eggs
1 1/2 cups shreeded cheddar cheese cheese
2 cups milk (low fat ok)
6 slices bread cubed
1 tsp salt (covers WWM's ears)
1 tsp dry mustard
1/2 tsp pepper
3-4 grates fresh nutmeg
1 tlbs fresh parsley chopped fineCube, brown and drain spam (try not to gag while doing it). Beat together eggs, milk, salt, pepper, mustard, parsley and nutmeg. Add bread and stir to coat well. Add spam and cheese; cover and refridgerate over night. The next morning, take out of fridge and let stand for at least 15 min. to take the chill off, then bake at 350 for 45 min.
