  1. Ok, just got my Sam the Cooking Guy newsletter and thought I'd share (the quotes are from Sam!)

    1. Sweet & Spicy Flank 4 servings
A good flank steak is one of my favorite things. Just remember you have a day of marinating ahead you before you can eat it...

    Ingredients
1 flank steak, about one and a half pounds
3 ounces chipotle peppers with adobo sauce
    1/2 cup brown sugar
    1 bunch green onions
    1/4 cup cilantro
    8 ounces orange juice

    Steps
Put all ingredients except flank in a food processor or blender and whirl until smooth
Put flank and marinade in a large Ziploc bag and seal - refrigerate over night
Remove from fridge 30-45 before grilling
Heat grill on high then grill flank about 5 minutes each side for medium rare
Slice into thin strips across grain to serve

    2. Corn Salad Serves 4
You can use either fresh corn that you grill or a can of corn - and trust me...the can is very easy and still really really good. Don't knock it until you've made it.

    Ingredients
3 ears of corn, husks removed, or
    One-15 ounce can corn kernels
    1 red pepper, diced small
fresh cilantro, finely chopped to make about 1/4 cup
    1/4 red onion, thinly sliced
    1/2 teaspoon cayenne
    4 ounces goat cheese crumbles
    Juice from 1/2 lime
    2-3 tablespoons olive oil
    Pinch of Kosher salt

    Steps
Brush corn with olive oil and roast on the grill until softened and brown in spots - let cool, cut off husk and put in bowl, or
If using the canned corn, drain the water and cook corn in a very hot pan with a little oil until it softens a bit and starts to get browned in spots - then put in a bowl
Add all remaining ingredients and mix well - serve and smile

    3. Pimm's Cup Makes 1
Pimms's is a gin based alcohol created in London in 1840 by the owner of a London oyster bar. It can be mixed with 7up, lemonade or in this case - ginger ale.

    Ingredients
    2 parts Pimm's
    2 parts ginger ale
    1 slice orange
    1 long cucumber spear

    Steps
Fill a glass with ice and add Pimm's and ginger ale
Squeeze and drop in orange wedge
Add cucumber to stir, then leave in and drink

  2. Whoa - those sound so good, Linda! I opened a can of chipotle peppers recently and needed only one. Now I'll know what to do with the rest of them! The corn salad sounds wonderful.

    Thanks!

  4. Hahaha! You called that one Linda! Wait til Jeff sees this corn salad recipe...anything that calls for cayenne is right up his alley! That Pimm's Cup...right up my alley since I'm a gin n' tonic girl I welcome an alternate way to make a gin drink. Medicinally of course. Oh and the flank steak has to be heart healthy, it even uses orange juice! =)

  6. and here is another one from Sam!

    Stuffed Burgers Makes 1
This is one case where size DOES matter. Remember - you're putting 2 burger patties together, and if they're too big, it'll be outta control.

    Ingredients
    For each burger you'll need:
    Two 1/4 pound hamburger patties
    1/3 cup red onion, diced
1-2 tablespoons steak sauce, try a spicy one
1 slice cheese - call me crazy, but I think you've gotta go with American slices here (It's all about the meltability.)
    1 hamburger bun

    Steps
Season the red onions with a little salt & pepper and saute in a little olive oil & butter.
Place a slice of cheese on one burger, then the onions, then the steak sauce and top with the other burger.
Try to gently pinch the edges of the two burgers together and you're ready to grill.
Throw them on the grill, carefully, and cook until done.

  7. oh, and also from Sam the Cooking Guy!

"But we need to remember that Memorial Day began as an important reminder of those who died in the service of their country. So do exactly that: take the time to remember those who served, remember those who died, and remember those who continue to serve. Find someone in the military and thank them.

    Have a great Memorial Day."

  8. Those sound great. I like Sam's recipes...he is funny, too. (BTW, I made "Spanish style" burgers last night. Tom loves them. Just top your burgers with cheese...Yes, American...easy melting, a bunch of grilled onions and a fried egg. REALLY good!)

  9. That all sounds so good!

  10. LOVE that last post of yours, Linda!

*looks up "meltability" in the dictionary*
