At work the vendors sometimes send things for us to eat. Well, the latest thing we received is an 11 pound block of dark chocolate. Tired of seeing it just sit there I took two big chunk home and am hoping to try and make something (easy) with it...any ideas...now remember, I don't do good with cakes but I would be willing to try if someone has a tried and true recipe...

I've never known dark chocolate to last to the recipe stage, it seems to throw itself between teeth before you know what is happening.

Avocado Chocolate Truffles.
Ingredients
250ml cream
275g real dark chocolate
75g fresh avocado butter (fresh avocado and avocado oil)
Good quality cocoa powder or tempered chocolateMethod
Chop the chocolate into chunks or break into squares. Put the chocolate into a heatproof bowl and microwave on HIGH until barely melted.
Scald the cream in a pan - allow it to boil and rise up (be careful it doesn't boil over.) Pour about a tablespoon onto the chocolate and mix well. Keep adding the cream, a spoonful at a time, mixing thoroughly to form an 'emulsion'.
When all the cream has been mixed in, add the avocado butter. The mixture should still be warm enough to absorb it, although it will take a few minutes to beat it in, so there are no lumps left. When it has set to the consistency of butter icing, it is ready to be piped or spooned into truffle-sized pieces.
If piping, put the mixture into a piping bag and pipe blobs of mixture about the size of a large cherry onto a tray covered with greaseproof paper or cling film. Leave to cool for at least 2 hours, preferably 24.
AdvertisementTo finish, drop into a tray of cocoa powder, roll briefly, shaking off excess and leave to set. Alternatively, the chocolates can be enrobed with tempered chocolate and drizzled with melted white chocolate or topped with a pistachio or blanched almond.
Makes approximately 25.
A local chef makes these, I don't know how to make the avocado butter,sorry.

Yes it is fine Alicia. Those Edible Arrangements that you can send instead of flowers have some that come dipped in dark chocolat and they make the arrangement in the morning and deliver--they are fequently out all day. Your office will love the chocolate covered fruit--or you can make a dipping sauce and warm it in a microwave for people to dip their own fruit.

I love dark chocolate, I sure would have taken a chunk myself. And yes, it would have fallen between my teeth and not needed to go into a recipe!

Dark Chocolate Molten lava cakes
Prep Time: 25 minutes
Cook Time: 10 minutes
Ingredients:* 5 - 6 ounces dark chocolate
* 6 tablespoons butter
* 1/2 cup sugar
* 2 eggs
* 1/2 cup flour
* Optional: Whipped or ice creamPreparation:
Preheat oven to 400 degrees F. Lightly grease four 4-ounce custard cups. In double boiler, melt chocolate and butter. Stir in sugar. In a small bowl, lighly beat eggs. Add some chocolate mixture to eggs to temper eggs. Carefully, stir egg mixture into chocolate mixture. Add flour and combine completely. Add batter to custard cups. Place on baking sheet and bake for 10 minutes. Centers should be soft but sides should be done. Invert cups on individual serving plates. Remove cups after 2 minutes. Hi, I love cooking topics, so I had to comment...Avocado Chocolate truffles sounds so unique! Molten cake is so classic! I got to try both sometime.
I tend to shy away from cakes since there are only two people in the house (excluding kitty) but I like making flourless chocolate cake when I have good quality chocolate. I have tried a williams-sonoma recipe, which works well for me. It's not something you can "whip up" quickly when you thought of making a dessert, but well worth it.

You can also melt chocolate and add small amount of canola oil (I adjust the amount to to make the chocolate syrupy) and pour it over ice cream, and you'll have hardening chocolate sauce. I like pouring that over (after cooled enough) a ball of good ice cream, and serve it over a bed of berries. You crack open the chocolate coating to eat the ice cream. I sometimes make the sauce with white chocolate too. It's pretty over chocolate ice cream.

I guess there were actually two blocks...one they brought to us and the other in our wholesale dept...22 pounds of this stuff...now understand this isn't really the kind of chocy you can munch on...some people did and got belly aches...it is bitter dark chocolate. the package actually said for "baking". If it had been "edible" it would have flown out the first break...LOL

aw, now I see! cause I eat the baking kind! I just LOVE it! 22lbs is still a lot of chocy!
