I have a question for the cooks.

  1. Next weekend Mr. WWM is riding a 150 mile bicycle ride that is a fundraiser for multiple sclerosis. Friday night two friends are coming from El Paso to do the ride with him and will be staying with us. I need to plan a dinner with some good carbs and also protein. Because I don't know exactly what time we'll be eating dinner I was thinking of doing some kind of a baked pasta. Mr.WWM doesn't do well with marinara sauce so it needs to have some sort of a white sauce. I saw a portabello mushroom lasagna with a bechamel sauce on The Barefoot Contessa that looked good.

    Does anyone have a good recipe for a baked pasta? And does anyone have a good recipe for some sort of a baked chicken? Could be a casserole, or baked pieces.

    Any ideas will be greatly appreciated by the innkeeper and cook!

  4. Chicken catatori. Spaghetti sauce with chicken in it. I use chicken breasts or tenders. Just throw it in the sauce and let it cook, throw on top of spagttei (try the high protein, it is actually pretty good)

    CHICKEN CACCIATORE

    Cacciatore means hunter in Italian and indicates the chicken is simmered in a well seasoned tomato sauce or "hunters style". 2 cloves of garlic, minced 2 tbsp. cooking oil 1 (2 1/2 to 3 lb.) broiler-fryer chicken, cut up 1 (16 oz.) can tomatoes, cut up 1 (8 oz.) can tomato sauce 1 med. green pepper, cut into 1 inch pieces 1 (2 1/2 oz.) jar sliced mushrooms, drained 1 or 2 bay leaves 2 tsp. dried oregano or basil, crushed 1/2 tsp. dried rosemary, crushed 1/4 c. dry white wine Pasta (hot & cooked)

    In a large skillet cook onions and garlic in oil over medium heat until onions are tender. Remove onions and set aside. Add more cooking oil to skillet, if needed. In same skillet brown chicken pieces over medium heat about 15 minutes, turning to brown evenly. Return onions to skillet.

    Combine undrained tomatoes, tomato sauce, green pepper, mushrooms, bay leaves, oregano or basil, rosemary, 1 teaspoon salt and 1/4 teaspoon pepper. Pour over chicken in skillet. Cover and simmer for 30 minutes. Stir in wine and cook uncovered over low heat for about 15 minutes longer or until chicken is tender, turning occasionally. Skin off fat and discard bay leaves. Transfer chicken and sauce to serving dish. Serve with hot cooked pasta. Makes 4 servings.

    Leftovers are great for after the ride, so make a bunch.

  6. I did, WWM and no luck :( I did it 3 times separately, since you said it was based on time. I thought I'd spread it out to maybe get more of a chance. But we still have till July 26!

  8. I make a baked lasagna all the time, layering grilled zuccini, calamata olives and roasted red peppers with a white sauce, and using fontina and parmaseana reggiano cheese...... (yes, you can leave the olives out to lessen the salt!)

    ...... I also bake chicken and yellow rice that is heavenly, and is a "no fail" dish..... brown pieces (use bone in ones)... heat the chicken stock, then use portions of 1 cup yellow rise (the packed vigo is fine) to 2 cups water, then add an additional 1/2 cup water.... cover tightly and cook for 1 1/2 hour at 350...... top with heated leseur baby peas, some fresh chopped parsley and serve!...... a nice green salad and warm garlic bread!......

  13. You could do a good old fashioned chicken and egg noodle casserole. If you want it to be super easy you can buy a rotisserie chicken. Remove the skin and shred the meat. Cook 1 bag egg noodles, 1 cup frozen green peas. In a bowl mix up one can each of cream of chicken soup and cream of celery soup ( you can use the low salt kind or low fat) 8 ounce container of sour cream, 1/2 cup parm and 1/2 cup of shredded cheddar cheese...or more if you like it cheesey. Spray your casserole pan and mix everything all together and put into casserole pan. Bake at 350 until hot and bubbly. I use whole wheat egg noodles when I can find them. The nice thing about this recipe is that you can use any kind of veggies in it and any combo of veggies. Sometimes I add celery, broccoli, pimentos. You can spice it up with a little cayene, you can change the cheeses. You can make several and freeze them. Make it the night before and have it in the fridge to pop in when he is about 45 minutes away. Goes a treat with a green salad, some good hot bread and a glass of white wine!

  14. You know that allrecipes was down on the 4th of July weekend--my banana bread recipe is there! I have never thought to print it or save it because it has always been there--boy was I an unhappy camper! I ended up trying one daughter brought home--banana bread with chocolate chips--not awful but not banana bread!

  15. WWM, I have a recipe for a vegetarian lasagne verdi that I absolutely love, and so do most people who try it, but it doesn't have mince, it has spinach instead and loads of cheese (and soya beans if you like but we don't!) so I don't know if that would give you enough protein?

    But it has bechamel sauce and mushrooms and loads of cheese and it is yummy. It takes a bit of preparation but you could always make the mushroom tomato sauce the night before. (Oh and you can add soya beans to the mushroom sauce for protein but we never do...)

    It's a long recipe so email me if you would like it, at j dot hurley at paradise dot en zed, and I will scan and send it to you. I've heard that peas are good to add to pasta for athletic-type meals!

  16. You could try a cold chicken and pasta salad. I can't give you measurements because I don't use them, but this is easy.

    Break whole wheat spaghetti into thirds, cook and drain it. (You could use any kind of pasta or noodles; I use whole wheat because my husband is diabetic)

    Bake or nuke a couple of boneless, skinless chicken breasts then tear or cut it into bite size pieces.

    Mix the chicken and pasta up with Balsamic and Basil salad dressing. (I use fat free but you could use regular).

    Add vegetable as desired (suggestions below)

    Mix, chill, garnish with a few whole basil leaves and eat.

    Things I add (depending on what I have on hand)

    Halved cherry or grape tomatoes (or whole tomatoes chopped)
    Green olives, cut in half
    Finely diced brown onion, or chopped green onions
    Canned corn, drained
    Canned artichoke hearts, drained
    Diced (or food processed) carrots
    Diced red, green, yellow and/or orange bell peppers
    Grated Parmesan cheese (and diced whatever-kind-of-cheese-I-have)
    Chopped dried tomatoes
    Chopped pepperoni or chopped cooked sausage
    Minced (very fine) garlic
    Minced basil, thyme, sage or whatever else is in my window box (except catnip)
    Diced celery
    Diced broccoli
    Sliced mushrooms
    Pretty much anything else that's in the fridge that looks good at that moment.

    The nice thing about this salad is that you make it ahead of time and it gets better as it sits. Sometimes I leave the chicken out and use it as a side dish. If you know someone doesn't like something, leave it out.

    It's easy, it's healthy and it takes care of a variety of leftovers.

  17. Thank you, everyone! SM, the lasagna looks wonderful. Mr. WWM isn't supposed to have spinach because he takes coumadin. But I don't think that little bit spread out over an entire dish would hurt. It's sad because he loves spinach. I think that I would make my own Alfredo sauce - easier to control the salt! :-)

    It is sad about the spinach! Really, it's all dark, leafy greens.
