okay, I just happened to have some corn today and bacon, so I did try this, since Richard was cooking some ribs today for lunch - it was good to me, but Richard isn't as much of a corn on the cob fan as I am. It took longer than 20 minutes, but I soaked the corn longer than the recipe said. We gave it about 30-35 minutes. It was good with and without butter - but good corn needs butter!

Good to know, Karen. Jersey corn, at its peak, is pretty sweet, but I admit, I love it with butter! The addition of bacon certainly intrigues me.

I've made corn on the cob like this a few times when I ate piggy. It did not flavor the corn as much as it really added great aroma. I like serving corn on the cob the way the street vendors in Mexico do...they add tons of toppers or "fixings"...chopped bacon being one of them. You can add almost anything...chopped jalapenos, any type of shredded/grated cheese, etc. If you are going for healthy, drizzling fresh lime juice on the cob and then sprinkling cumin on top is really good...and you don't need any salt, WWM!
I love grilled corn on the cob, especially when the corn gets carmelized. YUM YUM YUM. I'm pretty OC about getting all the corn silk off the ears. I've put fresh herbs (like basil leaves) on corn, then put the corn leaves back up over the cob and grilled it too. Yummy!
If you make up herb butter (or garlic butter) and use that on your corn, that's also just this side of Heaven (smacks lips)
Grilled corn on the cob is delicious with rosemary butter. You just cream some fresh rosemary into soft butter, spread on the de-silked cobs then pull the husks back up and grill. The bacon sounds good, but I think I will grill another couple minutes with the husks pulled down to get the bacon crispy.
