MC might be having a beau to dinner at her house

  1. And we need to help her with the menu! Not too "diva" but nice comfort food that will amaze him!

    Artichoke Bruschetta

    Ingredients

    * 1 6-ounce jar marinated artichoke hearts, drained, patted dry, chopped
    * 1/2 cup grated Romano cheese
    * 1/3 cup finely chopped red onion
    * 5 to 6 tablespoons mayonnaise

    * 16 1/3-inch-thick French bread baguette rounds

    Preparation

    Place first 3 ingredients in bowl. Mix in enough mayonnaise to form thick spread.

    Preheat broiler. Top bread rounds with spread. Arrange bruschetta on baking sheet. Broil until spread is heated through and begins to brown, about 2 minutes.

    You can make the artichoke mixture the day before. This is SO easy but it is delicious and goes very nicely with a Pinot Gregio.

  2. Roquefort Pear Salad

    INGREDIENTS

    * 1 head leaf lettuce, torn into bite-size pieces
    * 3 pears - peeled, cored and chopped
    * 5 ounces Roquefort cheese, crumbled
    * 1 avocado - peeled, pitted, and diced
    * 1/2 cup thinly sliced green onions
    * 1/4 cup white sugar
    * 1/2 cup pecans
    * 1/3 cup olive oil
    * 3 tablespoons red wine vinegar
    * 1 1/2 teaspoons white sugar
    * 1 1/2 teaspoons prepared mustard
    * 1 clove garlic, chopped
    * 1/2 teaspoon salt
    * fresh ground black pepper to taste

    DIRECTIONS

    1. In a skillet over medium heat, stir 1/4 cup of sugar together with the pecans. Continue stirring gently until sugar has melted and caramelized the pecans. Carefully transfer nuts onto waxed paper. Allow to cool, and break into pieces.
    2. For the dressing, blend oil, vinegar, 1 1/2 teaspoons sugar, mustard, chopped garlic, salt, and pepper.
    3. In a large serving bowl, layer lettuce, pears, blue cheese, avocado, and green onions. Pour dressing over salad, sprinkle with pecans, and serve.

    MC, this is really nice using butter lettuce, if it is available.

  3. Beef Braised in Red Wine

    Ingredients

    * 2 tablespoons olive oil
    * 1 (3- to 3 1/2-pound) boneless beef chuck roast
    * 1 teaspoon salt
    * 1/2 teaspoon black pepper
    * 1/4 pound sliced pancetta, finely chopped
    * 1 medium onion, finely chopped
    * 1 medium carrot, finely chopped
    * 2 celery ribs, finely chopped
    * 4 garlic cloves, thinly sliced
    * 4 (4- to 6-inch) sprigs fresh thyme
    * 2 (6- to 8-inch) sprigs fresh rosemary
    * 2 tablespoons tomato paste
    * 2 cups Barolo or other full-bodied red wine
    * 2 cups water

    Preparation

    Put oven rack in middle position and preheat oven to 325°F.

    Heat oil in pot over moderately high heat until hot but not smoking.

    Meanwhile, pat meat dry and sprinkle with salt and pepper.

    Brown meat in hot oil on all sides, about 10 minutes total. (If bottom of pot begins to scorch, lower heat to moderate.) Transfer to a plate using a fork and tongs.

    Add pancetta to oil in pot and sauté over moderately high heat, stirring frequently, until browned and fat is rendered, about 3 minutes. Add onion, carrot, and celery and sauté, stirring occasionally, until vegetables are softened and golden brown, 10 to 12 minutes. Add garlic, thyme, and rosemary and sauté, stirring, until garlic begins to soften and turn golden, about 2 minutes. Stir in tomato paste and cook, stirring, 1 minute. Add wine and boil until liquid is reduced by about half, about 5 minutes. Add water and bring to a simmer, then return meat along with any juices accumulated on plate to pot. Cover pot with lid and transfer to oven. Braise until meat is very tender, 2 1/2 to 3 hours.

    Transfer meat to a cutting board. Skim fat from surface of sauce and discard along with herb stems. Boil sauce until reduced by about one third, about 5 minutes, then season with salt. Cut meat across the grain into 1/2-inch-thick slices and return to sauce.

  4. Horseradish Mashed Potatoes

    Ingredients

    * 4 lb large yellow-fleshed potatoes such as Yukon Gold, peeled and quartered
    * 1 3/4 cups half-and-half
    * 3/4 stick (6 tablespoons) unsalted butter, cut into tablespoon pieces
    * 1 1/2 teaspoons salt
    * 1/2 teaspoon black pepper
    * 1/4 cup drained bottled horseradish

    Cover potatoes with salted cold water by 2 inches in a 5-quart heavy pot, then simmer, uncovered, until very tender, about 25 minutes.

    While potatoes are simmering, bring half-and-half, butter, salt, and pepper just to a simmer, stirring until butter is melted. Keep hot, covered.

    Drain potatoes in a colander, then immediately force through ricer into a large bowl. Stir in hot milk mixture, then horseradish.

  5. Green Beans with Walnuts

    INGREDIENTS (

    * 2 pounds fresh green beans, washed and trimmed
    * 2 tablespoons butter
    * 1 cup chopped walnuts
    * 2 tablespoons walnut oil
    * 2 tablespoons minced fresh parsley
    * ground black pepper to taste
    * salt to taste

    DIRECTIONS

    1. Place the walnuts on an ungreased baking sheet. Bake at 350 degrees F (175 degrees C) for 5 to 8 minutes.
    2. Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water, and drain well. Can be prepared 6 hours ahead. Let stand at room temperature.
    3. Melt butter or margarine with oil in heavy large skillet over high heat. Add beans and toss until heated through, about 4 minutes. Season with salt and pepper. Add walnuts and parsley and toss. Transfer to bowl and serve.

  6. Mexican Hot Fudge Sundaes

    Ingredients

    * 3/4 cup heavy whipping cream
    * 1/2 cup (or more) freshly brewed strong coffee
    * 16 ounces semisweet chocolate chips
    * 1 teaspoon ground cinnamon
    * 1/2 teaspoon vanilla extract
    * Vanilla ice cream
    * Toasted pine nuts

    Preparation

    Bring cream and 1/2 cup coffee to boil in medium saucepan. Remove from heat. Add chocolate and cinnamon. Stir until chocolate is melted and sauce is smooth. Mix in vanilla extract. Scoop ice cream into bowls. Top with warm fudge sauce and pine nuts.

  10. I just read on the Cafe thread that MC is finally getting tomatoes from her topsy turvy tomato thingy; there's nothing nicer than sliced tomatoes with fresh mozzarella and basil, drizzled with a little olive oil.

    She never brought it up to me again.

  14. haha! Well, it's true. Not every guy is a foodie, eh?
    Tom is just as satisfied with Kraft macaroni and cheese as he is with the "heavy-duty" cooking that I do most nights of the week. It still kind of irritates me, but I have to remind myself that I love to cook and I love to eat the results. He does, too...but I really wish he stroked me ego about it more...haha! But, there are plently of people out there who are just as satisfied with a bowl of cereal for dinner.

  20. A house painter or an artist painter?

    Cause if you're telling us he's a fireman and a rescue diver who loves cats and is thoughtful and thinks you're beautiful and he can cook AND he has a creative side too, then that's just almost too much for one man....

    And come to think of it, if he's a house painter, that's pretty handy too...

  21. He is a house painter. He just bought a house that was foreclosed on. He is re-doing the whole thing himself. The only thing he doesn't do is electric! He is pretty "talented"!

  28. That is a fantastic menu. I braise my beef roasts in red wine, too...and it is ridiculously good.

    WWM, they would eat so much food that they would be too full to, well, you know. Or is that the idea? haha!
