Wow, it's really been a long time since I've opened the night shift, but I'll give it a try. The doors are open, lights on, and the kitties are here pacing around looking for toys and treats. The fountains are running, and I've opened the bar. All drinks, hard and soft are available, and of course the wines of your choice.
In honor of Mr. WWM successfully completing the first leg of his Tour de West Texas ride, the featured menu is fajitas!!! The grill is fired up, I've set out tortillas (flour or corn, your choice), an assortment of salsas, including tomatillo, mango, and red and green chili, and assorted cheeses, including cotija, several cheddars, jack, and of course, pepper jack. The grill has steak, chicken, and lamb (an adventerous chioce, but tasty nevertheless) sizzling away, along with an assortment of vegies grilling~ onions, bell peppers, chili peppers, and assorted summer squash. There several kinds of guacamole, and some tortilla chips for munching.
The signature drink is the called the Tour de West Texas ~ a refreshing tequila and lime mojito served up or on the rocks, whichever you prefer. Please feel free to help yourselves or order up! Good evening everyone!!
