Tortellini Soup...It's quick and easy!

  1. Tortellini Soup

    Cut in half and de seed two large or three medium tomatoes. Place cut side down on a cookie sheet and broil for at least 10 mins. Set aside to cool. Once cool slip off the skins and dice. Or, you can use 1 can of diced tomatoes in juice.

    Saute two cloves of garlic (crushed) and some finely diced onion in 1 tablespoon olive oil.

    When the garlic and onions are tender add 1 box of chicken stock (Can use vegetable stock if desired) and bring to slow boil.

    Take 1 small zucchini and cut into fine pieces add to chicken stock. Add the tomatoes and their juice, plus 1 small can of tomato juice. Cook for about 10 minutes.

    Add the tortellini and cook for the length of time it says on the package. Fresh cheese tortellini is marvelous, but dried could be used as well.

    Add dash of oregano and basil to taste.

    Serve with garlic bread or cheese bread.

  3. What I like about this is I had all the ingredients on hand without a special trip to the grocery. This time of year, I always have tomatoes that I get from the farmer's market, I always have chicken stock in my pantry. I used the jarred minced garlic and I re-hydrated some freeze-dried shallots instead of the onions and I have basil and oregano outside in my giant herb pot. I get the fresh tortellini from Sam's but you can use the dried variety or even some other kind of pasta. It might even be good with ravioli.

  5. I guarantee he will like it and be impressed. For such an easy recipe it comes off as very gourmet. I had it at a tea room and after paying $5.95 for a smallish bowl of it, I decided that I could do this at home! If you feel like being extra fancy garnish with a little real parmesean cheese and a sprig of basil or oregano! Good garlic bread or cheesy bread really compliments this. Add a salad with italian dressing and you have made a meal fit for a restaurant.
