    Simply slice a Rice Krispies Treats bar in half to make 2 wide, thin bars. Spoon your ice cream evenly on top of one half, and gently place the other half on top to form a sandwich. If you like, place it in the freezer for a few minutes to firm up... or just eat it as is!
    BTW, 2 tbsp. of ice cream may not seem like a lot, but it is the PERFECT amount for this snack and you'll actually be able to open your mouth wide enough to take a bite

    PER SERVING (One 6-oz. container yogurt + 1/2 cup whipped topping): 160 calories, 1g fat, 105mg sodium, 31g carbs, 0g fiber, 18g sugars, 5g protein -- POINTS®® value 3* This little experiment turned out SOOOO good. Think of it as a DIY frozen dessert. Just mix the yogurt and Cool Whip Free together and freeze for about two hours, until solid. Grab a spoon and dig in! It might seem a little icy at first, but it's delicious! We think it tastes like crustless apple pie a la mode.

  2. Strawberry Margarita Mousse

    PER SERVING (1/5th of recipe, about 1 cup): 107 calories, 0g fat, 107mg sodium, 13gcarbs, 1g fiber, 6g sugars, 2g protein -- POINTS®® value 2*

    This wiggly, jiggly, creamy dessert is like a fruity fiesta in your face. And even if you ate half of the bowl of mousse (a HUGE portion!), you'd still take in fewer calories than if you ordered ONE frozen strawberry margarita at a bar. Sweet!

    Ingredients:
    1 large (8-serving) package JELL-O Sugar Free Strawberry Gelatin Dessert Mix
    2 cups frozen unsweetened strawberries, mostly thawed
    1 1/2 cups Cool Whip Free, thawed
    1 cup cold Sprite Zero (or any diet lemon-lime soda)
    1/4 cup plus 1 tbsp. (2 1/2 oz.) tequila
    3 tbsp. lime juice

    Directions:
    In a medium-large bowl, combine gelatin mix with 1 cup boiling water, and stir until completely dissolved, about 2 minutes. Set aside.
    In a blender, combine strawberries, soda, tequila, and lime juice. Puree until smooth. Add this mixture to the bowl with the gelatin mixture and stir thoroughly. Refrigerate for 45 minutes, until slightly thickened but not set. (Do not over-refrigerate.)
    Using an electric mixer, blend in the Cool Whip. Once mixture appears mostly blended, use a spoon to mix it up from the bottom. If needed, continue mixing until uniform. Refrigerate for at least 2 hours, until mostly firm. Enjoy!
    MAKES 5 SERVINGS

  3. Te Quiero Tequila Shrimp
    PER SERVING (half of recipe, about 1 1/2 cups): 206 calories, 2.25g fat, 470mg sodium, 9.5g carbs, 1.75g fiber, 4g sugars, 24g protein -- POINTS®® value 4*
    This recipe is fast and FANTASTIC. Quite possibly our best shrimp recipe to date. (And by that we mean it's our favorite so far. We don't want to buy it daisies and take it to a movie.)

    Ingredients:
    8 oz. raw shrimp, peeled, deveined, tails removed
    2 Roma tomatoes, chopped
    1 small onion, sliced
    3 tbsp. (1 1/2 oz. or 1 shot) tequila
    2 tbsp. lime juice
    2 tbsp. coarsely chopped fresh cilantro
    1 tsp. minced garlic
    1/4 tsp. chili powder
    1/4 tsp. salt

    Directions:
    Bring a large pan sprayed with nonstick spray to medium heat. Add onion and garlic, and cook until onion is slightly translucent, about 3 minutes. Carefully add tequila to the pan and stir. (It's unlikely it will flare up, but be cautious, just in case.) Cover the pan and let simmer for 5 minutes.
    Add shrimp and cook for about 3 minutes, until shrimp are nearly opaque. Add tomatoes, lime juice, cilantro, chili powder, and salt, and mix well. Stirring occasionally, cook until tomatoes have softened and shrimp are cooked through, about 2 minutes. Enjoy!

    MAKES 2 SERVINGS
    HG Alternative! The cilantro works reeeeally well here (believe it!), but if that herb's a non-negotiable for you, just skip it or swap it out for chopped scallions.

  4. Those sound wonderful, Linda! Mr. WWM will love the rice krispie one because he is a fan from when he was a little boy.

    The shrimp sound awesome and I will definitely use the cilantro!

  5. A Guilt-Free Frozen Dessert

    The best way to chill out at the end of a sizzling summer day is with a refreshing frozen treat. This guilt-free dessert is sure to keep you cool and satisfied.

    Chilled Espresso Custard (Phase 1-southbeach)

    Description
    Even dessert requires a little variety from time to time. If you're looking for a change, try adding this tasty alternative to your dessert repertoire.

    Serves 4

    Ingredients
    1 1/2 cups 1% low-fat milk
    2 eggs, beaten
    3 tablespoons sugar substitute
    2 teaspoons espresso powder or instant decaffeinated coffee
    1 teaspoon vanilla extract
    Ground cinnamon, for garnish
    Lemon twists, for garnish

    Instructions
    In a medium bowl, whisk together the milk, eggs, sugar substitute, espresso powder or coffee, and vanilla extract until well blended. Pour into four 6-ounce custard cups or ramekins and place in a 10" skillet.

    Fill the skillet with water to 1/2" from the top of the custard cups. Bring the water to a boil over high heat. Reduce the heat to low, cover, and simmer for 10 minutes. Remove the cups from the skillet, cover with plastic wrap touching the surface of the pudding, and refrigerate for 3 hours, or until chilled. Garnish with the cinnamon and lemon twists.
