First, an explanation. I don't cook, or rarely. There are a few things I make (a killer chili, the best meatloaf evah!) but otherwise I'm all convenience foods. The freezer is my friend. But lately I've been hungry for meatballs. I've tried several versions of prepared brands but didn't like them for one reason or another, too tough, tasteless, etc. So I set about making my own version. (after much peeking at Food Network recipes but most of those say you have to chop your own garlic! gasp!) And not to brag, but my latest batch turned out pretty good! Even for breakfast! So I will share. Note: some semi-homemade ingredients, and my measurements are grandma style (handful of this, etc) and def. not gourmet from scratch.
1 lb of hamburger
1 egg whisked with two big splashes of cream
1 heaping palmful of prepared bread crumbs (progresso)
1 scant palmful of freeze dried chives
1 scant palmful of freeze dried parsley
1 heaping spoon of crushed garlic (from a jar)
1 heaping palmful of Romano grated cheese (from the red jar)
1 scant tsp each of salt, black pepper, and onion powder
preheat oven to 350
mix with hands, and form into 20 balls, place in sprayed baking dish
bake 20 min, turn bake 10 more min. I added a few minutes onto that cause I like a little crust on the outside. I will be trying this batch with spagetti sauce, but the last batch I dumped on a can of mushroom soup and a glop of sour cream and served them over noodles. As Rachel says, "yummo"!
The ones I just taste tested even tasted good without any sauce. I want to try a sweet and sour sauce, or even just plain brown gravy (from a can, of course)!
