  1. Okay..I bought a butternut squash...
    now what do I do with it?
    I have...brown sugar, cinnamon, nutmeg..maybe cloves...can I bake it...how??
    Microwave it? I have never and I mean never made squash at all...help!

  2. Now why did you go and buy it if you don't know what to do with it? Though it does sound delicious. Be curious to see what our TDK cooks come up with. I am sure WWM and AV will have fantastic recipes as they always do!

  3. I have only ever had butternut squash as soup and it is delicious. Here is a recipe I found that seems pretty easy.

  4. I have heard butternut squash is yummy and it was only like 79 cents..so I got one, thinking maybe, just maybe I can entice Maddie to eat it and I figured if it was soft enough, Abbie would eat it too....I am looking at recipes online and trying to find one that's easy and sounds good.

  5. Acorn squash is an easy one: Cut in 1/2, scoop out seeds. Place each half cavity side up in shallow pan with about 1" of water on bottom. Fill Cavity with brown sugar & butter. Micro until tender...fork pierce w/o residue on tongs. (I apologize...I make this alot but don't know the exact time etc!)

  7. YUM!! I love butternut squash I have it all the time! Usually I peel and dice it with potatoes and sweet potatoes and put in oven with olive oil, drizzle with honey and herbs. we usually have with a piece of fish!

  9. Butternut squash is so yummy! My mother cuts them in half, scoops out the seeds, then fills them with butter and salt and pepper. Bake until soft, then whip. Yummy!!

  10. I chop up rosemary, sage and parsley usually which we have growing in pots during summer, but if not just dried mixed herbs. Sometimes seeded chilis to if we fancy it spicy!

  12. That is so funny because I've been upstairs quilting and turned on the food channel. Two programs had butternut squash recipes. One of them was Sandra Lee.

    Butternut Squash with Balsamic Honey Glaze

    ingredients

    * 1 peeled cubed butternut squash
    * 2 tablespoons honey
    * 1/4 cup balsamic vinegar
    * 1 tablespoon lemon pepper seasoning
    * 3 tablespoons olive oil

    Directions

    Preheat oven to 400 degrees F.

    In a large bowl combine all ingredients and mix to coat the squash.

    Place squash on a nonstick baking sheet or a baking sheet lined with foil. Bake until the squash is tender and brown about 30 to 35 minutes making sure to flip the squash after 15 minutes.

    Roasted Butternut Squash Salad with Warm Cider Vinaigrette

    Ingredients
    nocoupons

    * 1 (1 1/2-pound) butternut squash, peeled and 3/4-inch) diced
    * Good olive oil
    * 1 tablespoon pure maple syrup
    * Kosher salt and freshly ground black pepper
    * 3 tablespoons dried cranberries
    * 3/4 cup apple cider or apple juice
    * 2 tablespoons cider vinegar
    * 2 tablespoons minced shallots
    * 2 teaspoons Dijon mustard
    * 4 ounces baby arugula, washed and spun dry
    * 1/2 cup walnuts halves, toasted
    * 3/4 cup freshly grated Parmesan

    Directions

    Preheat the oven to 400 degrees F.

    Place the butternut squash on a sheet pan. Add 2 tablespoons olive oil, the maple syrup, 1 teaspoon salt and 1/2 teaspoon pepper and toss. Roast the squash for 15 to 20 minutes, turning once, until tender. Add the cranberries to the pan for the last 5 minutes.

    While the squash is roasting, combine the apple cider, vinegar, and shallots in a small saucepan and bring to a boil over medium-high heat. Cook for 6 to 8 minutes, until the cider is reduced to about 1/4 cup. Off the heat, whisk in the mustard, 1/2 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon of pepper.

    Place the arugula in a large salad bowl and add the roasted squash mixture, the walnuts, and the grated Parmesan. Spoon just enough vinaigrette over the salad to moisten and toss well. Sprinkle with salt and pepper and serve immediately

  15. OOH, WWM those both sound really good! Went to a restaurant with FF this past weekend and they had some squash dish that was really good and I haven't the slightest idea what they had on it (but it was DELISH!).

  16. This is funny I just ate this for lunch.

    I dont have a super fancy recipe, but its easy and its good, not good for you but good.

    Put the squash in the microwave for about 2-3 mins. Then when its cool enough to handle it get a sharp knife and cut it in half, so you are left with two bowls.

    Scoop out the seeds, use a knife or fork to stab some holes in the flesh, don't poke so hard you break the outside skin.

    Then add some water to each bowl and microwave till its tender, so you can stick a fork in with out trying to hard. I did about 6 min today but I had a big squash.

    Dump the water from each bowl, and now add a bit of butter and a tablespoon of brown sugar to each bowl.

    Microwave for another 2-3 mins so the butter is melted.

    Its ready to eat !

  17. mmmm Thanks Spanky...That's similar to what I did in the oven..(I already had the oven on for dinner) I used brown sugar, butter, salt and pepper. It came out really good!! Wayne doesn't like it and Maddie turned her nose up at it but it was great. I saved most of it and will give some to Abbie and me for lunch tomorrow.

  18. Ooh, yum, I love squash (we call it pumpkin). Here, we just cut it, scrape out the seeds etc (you can dry and toast them for a snack but I'm too lazy!), cut it into sizeable chunks, drizzle it with butter and roast it in the oven for around an hour (depending on size of chunks) at 180 degrees Celcius (375 F). Yum, yum.

    If a pumpkin's hard to cut and peel (most of them are), I put some cuts in the skin then put them in the microwave for a minute or two on high. Makes them easier to deal with.

    Bet MS has some fine soup recipes too!

  19. i love all squashes, tho summer squashes have less carbs than winter ones.
    the ways i love squash:
    1) sliced and fried zucchini, breaded if i can convice mom to make it
    2) cubed abd steamed with butter, and/or cheese
    3) steamed and mashed, like potates, with butter, and/or cheese
    4) cubed and baked, with spaghetti sauce, and cheese

    cheese = parmesan, ricotta, mozzerella

    i really don't care for brown sugar on my squash

    i like summer and winter squash, vegetable spaghetti squash, pumpkin, and carrots !!! it's good cheap eating. my mom grows every kind of squash you can think of, and i get them for free !!!

  22. I make squash all the time. I cleave the butternut squash and simply brush with olive oil and bake. My husband may spray it with butter, but I just dig in! Acorn squash I cleave and brush with olive oil and throw in a slice of bacon and bake. I like my squash not to have a lot on it.

  23. I have never bought squash since I didn't know how to make it. This was one was easy..I cut it, scooped out seeds, brown sugar, salt and butter and baked it.
    Tasted like sweet potatoes actually.

  25. Butternut squash is delicious! I like to cube and put in the pressure cooker for two or three minutes. Then some butter and nutmeg yummmmmm!!!!
