  3. im providing the ingredients, my mom is cooking. thats what she wanted to do this year. i will be making the cranberry orange nut relish, and maybe mashed cauiflower, but of course i will offer to help. well be eating at my moms and i get all the leftovers...

  5. I don't find the cooking for Thanksgiving difficult after cooking for a hundred or so at an SCA feast :-) After that, cooking for 8-20 is easy! I kept having time leftover and I was looking around thinking "what else can I cook?" (lol)

    I agree 100% with the comment about tossing the stupid popup timer that comes in some turkeys. The instant temperature probes are far more accurate, especially if you test the temp in a couple of places on the bird.

    Taking the bird out and letting it rest fifteen to twenty minutes prior to carving helps in more than one way. It allows the juices to absorb back into the bird, keeping it moister and juicier, and if you cover it with tinfoil, the heat will continue to cook the bird for another ten minutes or so (this is called 'carryover'). This means you can actually remove the turkey when it's about 10 degrees below target temp (I think it's 160 for turkey, but I might be wrong).

    Once the turkey's out of the oven, if you have other dishes you're trying to keep hot, you can put them in that oven (don't forget to turn the heat off).
