In Praise of Fruitcake

  1. Hmm, I must admit it is not one of my fave Holiday treats. Well, if it was covered in chocolate and had choco chips inside I may try it again! bump...

  2. I guess you don't mean the teeth defying,unidentifiable able to survive a nuclear winter kind like I grew up with. I'd find the stuff still in the fridge in the summer and Dad wouldn't let me throw it away,in fact he'd have a slice,he loved the stuff.

  3. Hahahah..Marsha I remember the fruitcakes you're talking about! My mom and grandma would giggle and delight over slices of those with coffee on winter mornings. I just couldn't see the delight then and still can't! =)

  4. I can't stand fruitcake but my mother-in-law actually likes to get them for Christmas. If you're going to buy one, some of the best (if that is a word that can be used in the same sentence with fruitcake) are from the Collins Street Bakery in Corsicana, Texas.

  6. Remember that old joke about how there is actually only one fruitcake and it just keeps being recycled? Someone gets it one year, they don't want it and so they give it to someone else the next year.........

  7. Here is a recipe for fruitcake that the Tampa Bay area seemingly loves...I have never tried it, but it sounds much better than typical fruitcake. (Those bitter green things are gross!)

  9. I can't eat fruitcake; I'm allergic to the tree nuts in it. It seems like fruitcake should have just fruit in it instead of fruit and nuts.

  10. i've seen videos of people shooting fruitcake in the air with catapults and trebuchets. good ammo.

    but i do have to say of all the fruitcake i've eaten, my mom's was the best. of course you could drunk on it if you ate enough, but that is another story...

  11. Vicki, check out this recipe. I've made one basically the same as this for years(lost the recipe now).

    GINGER ALE CAKE

    3 and a half cups of mixed fruit
    One cup of ginger ale
    Soak the fruit in the ginger ale overnight

    200g butter (8 oz)
    1 and a half cups brown sugar
    3 eggs
    2 cups flour
    Line a 20cm(8inch) square cake tin with a double layer of newspaper and one of brown paper or greaseproof. Grease well with butter.
    Cream the butter and sugar until light and fluffy.
    Add the eggs one at a time and mix well.Stir in the fruit mixture.
    Sift the flour and mix in thoroughly Press mixture in the corners
    first then spoon mixture in and press down firmly making sure its evenly spread,Sprinkle the top with some water then bake at 140-150C(280-300F)
    for 3 to 3 and a half hours.
    This cake can be iced if you wish.
    Mixed fruit here is raisins, currants,sultanas,cherries & peel.
    It's a very easy recipe and a lovely cake.

  12. I'm not too far away from Collin Street Bakery and I can attest to how great their fruitcakes taste. I didn't think I liked them until I tried theirs!

  13. I love fruitcake! LOVE IT! (If I could get my letters any bigger I would) Claxton's in Georgia makes great fruitcake. Nothing better after dinner than a couple of slices of fruitcake and a big glass of milk or egg nog.

  17. My mum's Christmas cake is absolutely yummy, nothing nasty in it AT ALL and definitely no candied peel or neon anything. My mum is a fabulous cook (she said, smugly).

  18. I LOVE FRUITCAKE! Lots of raisins, sultanas and currants, some fresh orange and lemon zest grated finely - just to combat the sweetness and some orange and lemon juice, lots of chopped almonds (because I like 'em!), alcohol if you feel like it (I often soak the dried fruit in brandy first to make sure it's all nice and plump and juicy) a lots of eggs a little flour some cinnamon, mixed spice and fresh nutmeg and that's about it - baked at gas mark 2 or 3 for about 3 hours (or until it's done, depending on size of cake made).

    Cool, eat with strong cheddar cheese.

  19. I love some fruitcakes... my Mom used to make a great fruitcake, and when I was little I would help her arriange the fruit and nuts in the pans, so that the slices would "look pretty"! Most commercial cakes are not very good, but the small bakeries in many areas do produce delicious versions. But if people admitted to liking fruitcake, the late night comics would lose their traditional jokes for the holiday season!

  22. Fruitcake!... Dee, I have seen Ms. Harvey's receipe in the Trib for years!!! LOL!... Hubb's grandfather (before he passes away last year) used to make that receipe for the past 10 years or so!..... I was never a fan, but Hubbs would "rave" about it each year, just to make his granddad feel good!.... I think he gained 5 lbs with every slice he ate!... that has to be one of the heaviest cakes there is! LOL

  23. OMG! WWM, my mom and sister's ADORE the Collin's street Fruitcakes. I shudder everytime I see those red tins they come in. My mom always made sure to save them to pack our Christmas Cookies in and have the nerve to ask for them back (so she could use them again the next year to taunt us). Sorry but those candied fruits are wrong! Wrong! Wrong!

  24. AV.... Would you share the recipe???? I'm thinking of building a small retaining wall around the front flower bed. And any left overs I will eat... I love fruitcake!!!! My mom would make it every year, and "seasoned" it with bourbon, during the curing process. I have relented to the purchase of Claxton fruitcakes...which are o.k., esp. when they are seasoned a little bourbon before hand!!!!

  27. Amazing how this thread brought back memories of the good old days....Not to date myself too badly......but it was in the early/mid 50's (I was just a tyke) ;)..... Mother would start baking these fruitcakes, maybe early November. Putting them in tins, some round some square. On top of each cake she put a wad of cheesecloth, soaked in bourbon. Every week she would remove the lid and give it another dousing, if it appeared to be dried out..... maybe a tablespoon or two. I believe this was my first intro to adult beverages, in baked goods!!! I don't recall the fruit used to be the nasty citron stuff, or a lot of it. Just remember her fruitcakes were soooo good!!!!

  28. My grandmother adored fruitcake and made these cookies every Christmas that she called whiskey cookies, but really they were little fruitcakes. None of us liked them but she baked them every year anyway. One year we were at my sister's for Christmas and we all went to midnight church and forgot that we had left a plate of cookies out on the coffee table. Her little Schnauzer got into the cookies while we were gone and ate a great many. When we got home we found a little pile of candied fruit that he had spit out from the cookies. He didn't like them, either! (don't worry - there wasn't enough whiskey to hurt him as it all evaporated in the baking)

  29. 12P, this is the original receipe as posted in the Tampa Tribune all those years.... I have to say, Granddad did try a "bourbon" or "rum" soaking a few years, but this is the basic receipe he always followed!

    and yes, these cakes are AS SOLID AS BRICKS!!! LOl

    MRS. HARVEY'S WHITE FRUITCAKE

    4 cups shelled pecans

    1 pound candied cherries

    1 pound candied pineapple

    1 3/4 cups all-purpose flour

    1/2 pound butter

    1 cup sugar

    5 large eggs

    1/2 teaspoon baking powder

    1/2 to 2 ounces vanilla extract

    1/2 to 2 ounces lemon extract

    Chop nuts and fruit into medium-size pieces; dredge with 1/4 cup of flour. Cream butter and sugar together until light and fluffy. Beat in eggs. Sift together remaining flour and baking powder; fold into butter-egg mixture. Stir in vanilla and lemon extracts. Blend in fruit and nuts.

    Grease a 10-inch tube pan.

    Line with parchment, wax paper or foil; grease again. Pour batter into prepared pan or pans. Place in cold oven and bake 2 1/2 to 3 hours in tube pan or 2 hours in 8 1/2-by-

    4 1/2-inch loaf pans at 250 degrees. Check cakes 1 hour before done and again in 30 minutes. When done, remove from oven; cool in pans on cake rack.

    Makes 5 pounds of fruitcake.
