  1. *Pops an aspirin after reading of Gini's assignments and remembering the ones from nursing school*

    Would anyone like a biscotti with your afternoon coffee?

    Gingerbread Biscotti

    Ingredients

    * 1/3 cup vegetable oil
    * 1 cup white sugar
    * 3 eggs
    * 1/4 cup molasses
    * 2 1/4 cups all-purpose flour
    * 1 cup whole wheat flour
    * 1 tablespoon baking powder
    * 1 1/2 tablespoons ground ginger
    * 3/4 tablespoon ground cinnamon
    * 1/2 tablespoon ground cloves
    * 1/4 teaspoon ground nutmeg

    Directions

    1. Preheat the oven to 375 degrees F (190 degrees C). Grease a cookie sheet.
    2. In a large bowl, mix together oil, sugar, eggs, and molasses. In another bowl, combine flours, baking powder, ginger, cinnamon, cloves, and nutmeg; mix into egg mixture to form a stiff dough.
    3. Divide dough in half, and shape each half into a roll the length of the cookie. Place rolls on cookie sheet, and pat down to flatten the dough to 1/2 inch thickness.
    4. Bake in preheated oven for 25 minutes. Remove from oven, and set aside to cool.
    5. When cool enough to touch, cut into 1/2 inch thick diagonal slices. Place sliced biscotti on cookie sheet, and bake an additional 5 to 7 minutes on each side, or until toasted and crispy.

  2. Mmmm gingerbread biscotti smell good/thanks WWM..coming in for a warmer for it is still only +8 with 1-1/2 hours to go until quittin' time! Will grab 2 just in case & my joe...now gotta go you know where!

  4. I had never made biscotti before Christmas but I thought that I would try it. It's really easy and we liked the gingerbread so much.

  6. Hi all! Gini, contact me if you need help. I had to lead a four hour class in grad school on the reflex arc in neurology. It was hard but I did it and so can you! I am soooooooooo cold, it never got above zero here today. I think, I am frozen. Or I can't really think at all I am so cold! I got fish and chips for dinner, am under my blankets, have a space heater nearby and my girls on my lap. Hope to thaw by spring! How was your day?

    I am cold too MC! Was out shoveling a few times today and can't seem to get warm either! Right now it's 19 out. Maybe getting down to 7 tonight. Brrr.... We got about 4-5" of snow. It was light and fluffy too so easy to shovel. :)

  9. Good afternoon littermates, it's Saturday here. We have an overcast damp day with more rain forecast. Have been waterblasting out Mr MS's bait freezer that was accidentally turned off, PHEW!. All cleaned and bleach washed out and back in place. Meegz & Mr Meegz called in, they had been to a Kenny Rogers concert lastnight and were buzzing, it was brilliant they said.
    Off to hunt in the fridge for some lunch.
    Gone to the Night Shift.
