Superbowl snacks?

  1. So, with the big game approaching, I am looking for ideas of what to take to my work's big SuperBowl party.

  3. There will be too many people there to make soup. Trying to think of something in the finger food line that hasn't been done to death, like meatballs, little smoked sausages or wings. I know all three of those have been picked by other people.

  4. Sounds like the meat products are well represented :) Do you (or your coworkers) like spicy stuff, salsa, that kind of thing? That's always my first thought for party food.

  8. Kykat, one thing I like is a meatless taco salad--and it's simple. Depends on how many you want to serve as to proportions, but it's 1 or 2 cans red Kidney beans, (you can use pinto beans, but I prefer Kidney), chopped onion, chopped green bell pepper, chopped tomato, shredded cheddar, shredded mozzarella, and just before serving, add Kraft Catalina dressing to mix it up--serve with tortilla chips, either whole or crushed. It's delish. And it can be varied for taste--if you and other's like spicier, use some chopped Jalopena, or dress it up with red or yellow bell peppers.

    It can also be put in a 13 x 9 dish and layered--use shredded or chopped lettuce on bottom, then sour cream,beans, tomatoes, onions and peppers, and cheeses, top with crushed torlilla chips or even barbequed Fritos (it's great with the Fritos). Drizzle Catalina dressing over it but don't mix, before you add the chips or fritos.

  10. CCM - those sound fantastic! Wish we could get those here but we are 'jalapeno challenged' apart from sliced ones in a jar.
    KyKat - could you do something like a big fried rice dish that you could keep warm in the crockpot. I guess its not finger friendly but I presume people will be using plates.

  14. This may be a winner

    Jalapeno Popper Dip
    (makes 4 snacks sized servings)

    Ingredients:
    1 (8 ounce) package cream cheese (room temperature)
    1/2 cup mayonnaise
    1/2 cup cheddar cheese (grated)
    1/2 cup parmigiano reggiano
    1 (4 ounce) can sliced jalapenos (pickled)
    2 jalapeno peppers (chopped, optional)
    1/4 cup panko bread crumbs
    1/4 cup parmigiano reggiano

    Directions:
    1. Mix the cream cheese, mayonnaise, cheddar cheese, parmigiano reggiano and jalapenos in a bowl and pour into a baking dish.
    2. Mix the panko bread crumbs and parmigiano reggiano and sprinkle over the dip.
    3. Bake in a 375F oven until bubbling on the sides and golden brown on top, about 10-20 minutes.

    Hot buffalo chicken dip

    1 small can chicken drained
    4 + shakes of Buffalo sauce (hot)
    1 block Cream cheese (soft)
    ¼ cup Blue Cheese or Ranch dressing

    Mix and Bake at 350 until brown.

  17. The Reuben Dip looks delicious, too...and really easy!

    Reuben Dip
    (makes 2 servings)

    Ingredients:
    1/2 cup corned beef (diced)
    1/4 cup sauerkraut (squeezed and drained)
    1/4 cup Swiss cheese (shredded)
    4 ounces cream cheese (room temperature)
    1/4 cup thousand islands dressing

    Directions:
    1. Mix everything in a large bowl.
    2. Pour the mixture into a baking dish.
    3. Bake in a preheated 350F oven until bubbling on the sides and golden brown on top, about 20 minutes.

  19. Kykat,

    Split the Jalapeños and de-seed
    put 1 shrimp in each jalapeño
    wrap jalapeños with 1 strip of bacon (insert tooth pick to hold in place)
    broil until bacon is crisp

    The recipe I was given for this called for fresh de-veined shrimp, but I use frozen pre-cooked shrimp and it always comes out fine.

  23. How about pigs in a blanket? Cut 4 hot dogs in half, roll out crescent rolls, put a slice of cheese on them, and roll the dogs up. Bake at 350 for about 13 minutes. Double, triple or more depending on number of guests. You can use cocktail weenies, but regular hot dogs are cheaper and just as good. Serve with cocktail sauce.

  24. Joan, I thought about hogs in sleeping bags. Same as Pigs but with Smoked Sausage segments instead of hot dogs. Served with a good mustard dipping sauce. Or those Pepperoni bites look good too.

  27. Greek 7 Layer Dip (sounds delicious!)
    (makes 4 servings)

    Ingredients:
    1 1/2 cups hummus
    1 cup tzatziki
    1 cup tomato (diced and mixed with 1 tablesoon lemon juice and 1/2 teaspoon oregano)
    1/2 cup cucumber (cut into small pieces)
    1/4 cup red onions (diced)
    1/4 cup feta (crumbled)
    1/4 cup kalamata olives (pitted and coarsely chopped)
    1 handful mint (chopped)
    4 whole wheat pitas (cut into triangles and toasted until just crispy)

    Directions:
    1. Assemble dip starting with the hummus and stacking each ingredient on top of the last.
