  1. No, not me!!!! I'm starting this in honor of Dee!

    Sea Salt Brownies

    Ingredients:

    * 2/3 cup all-purpose flour
    * 1/2 teaspoon baking powder
    * 1/4 teaspoon table salt
    * 2 squares (2 ounces) unsweetened chocolate
    * 2 squares (2 ounces) semisweet chocolate
    * 1/2 cup (8 Tablespoons or 1 stick) butter
    * 2 eggs
    * 1 cup white granulated sugar
    * 1 teaspoon vanilla
    * 1 cup chocolate chips
    * .
    * Topping:
    * 3/4 cup chocolate chips
    * 1 teaspoon (about) coarse sea salt (of course for Dee it could be a tablespoon!)

    Preparation:
    Preheat oven to 350 F. Line an 8- x 8-inch baking pan with nonstick foil.

    In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

    Melt unsweetened chocolate, semisweet chocolate, and butter in the top of a double-boiler, stirring until smooth. Remove from heat, then remove the top of the double-boiler to a folded towel. Let cool for 5 minutes, then whisk in eggs, sugar, and vanilla.

    Add flour mixture to the wet ingredients, stirring by hand. Do not over-mix. Fold in chocolate chips and pour into prepared pan.

    Bake for 25 to 30 minutes. Sprinkle with the chocolate chips as soon as they come out of the oven. Let rest for 5 minutes to let chocolate soften, then use a spatula to spread chocolate evenly over the top. Using your fingers for control, sprinkle evenly, but sparsely with coarse sea salt. Tap pan gently on the counter to set salt crystals into the frosting.

    Refrigerate about 15 minutes to set frosting. Let brownies come to room temperature before cutting to serve.

    Yield: 16 brownies

  4. I've been seeing a bit of salt on lots of fine chocolate lately. It really isn't more than a sprinkling on top. I think the salt is supposed to enhance the flavor of the chocolate.

  5. We have a local chocolatier that has been selling chocolate covered (salty) popcorn for ages. Thought the combo sounded disgusting, 'til I tried some. It's to die for, and very addictive.

  12. I had a chocolate covered caramel with sea salt sprinkle last summer. It suprised me tht it was so tasty, cause I thought it would taste wierd.

    Margaritas on the Rocks

    Ingredients

    * 2 cups sweet and sour mix
    * 1 cup triple sec
    * 1 1/2 cups gold tequila
    * 1/3 cup brandy-based orange liqueur (such as Grand Marnier®)
    * 2 limes, quartered

    Directions

    1. Salt the rims of 8 glasses. To do so, pour salt onto a small plate, rub the rims of the glasses with lime, and press them into the salt. Fill the glasses with ice.
    2. In a blender, combine sweet and sour mix, triple sec, tequila and Grand Marnier. Blend until smooth. Pour into glasses, squeeze a quarter lime into each glass, and serve.

  14. Oh Margaritas on the rocks...yummy! Just need some nice steak fajitas with mild salsa and guacamole and we are all set. A trip to Chevy's would do the trick.

  17. Went out to Chili's in support of the band last night--I have 2 Perfect Margaritas--they do not have salt--sorry Dee. They do have fresh squeezed lime juice--makes them well PERFECT!

  18. Asian Cucumber Salad

    Thai cooks call these sweet and vinegary cucumbers a “salad,” but serve them as a relish with grilled food.

    Ingredients
    1 (about 9-inch) cucumber, peeled and thinly sliced
    3 green onions, thinly sliced
    1 1/2 tablespoons sugar
    1/4 teaspoon kosher salt
    3 tablespoons rice vinegar
    Instructions

    1. Combine cucumber and green onions in a medium bowl. Add sugar, salt and vinegar and mix gently with a large spoon. Cover and refrigerate overnight. Yield: 1 1/2 cups.

  20. I like salt! I even salt my apples and watermelons. WWM thanks for the cucumber recipe. My local sushi place does that salad (no onions) and I love it. I think I'll make some at home soon.

  24. Oh.... be careful with that mandolin!!! Remember when I made a really good attempt last year to cut off my finger with my new mandolin?

    Yeah, I think that I would use only one green onion in the cucumber salad, if any.

    I eat salt on watermelon, too!

  25. Mmm the asian cuke salad sounds yummy WWM...my sis used to enjoy her Margaritas on the rocks too, and with salt around the rim. Wow Soxs...never thought of Chilis w/best Margaritas...next time I will try one! Just salt on tomatoes for me, which is pretty ordinary.
    Oh and don't forget a pinch of salt in your cheap pot o' joe to take away the bitterness, oy...forgot, this isn't the Coffee Thread...tee hee!

  29. Maple Bacon Party Mix

    2 cups corn chex

    2 cups rice chex

    2 cups wheat chex

    1 cup peanuts, salted and roasted

    6 strips bacon, cooked extra crispy and chopped

    4 T. butter, melted

    4 T. maple syrup

    1/4 – 1/2 teaspoon cayenne (depending on how spicy you like it)

    1-1 1/2 teaspoons sea or kosher salt (any salt will do but if you are using table salt reduce the quantity)

    Combine the cereals, peanuts, and cayenne in a large, microwavable-safe bowl. In a small bowl combine the butter and maple syrup. Add the butter mixture to the cereal and stir very well. Microwave on high for three minutes stirring every minute to prevent the sugars to scorch.

    Add the bacon and salt. Stir. Let cool. Serve.
