  6. Hi all - Friday afternoon, yay! I have three more hours of work. Getting tired, too. Bobby went bonkers around 2:30 and woke me in the process and then I got an attack of asthma and couldn't go back to sleep because I was wheezing. I was trying to avoid using the inhaler, but I finally had to give in an use the old one which doesn't make me as shaky. Anyway, I didn't fall back to sleep till after 4:00 and then had to get up at 5:00. Guess I'm just not supposed to get a good night's sleep!

  14. What kind of business is Mr. AV beginning, AV? The pizza business you've talked about before? Yummmmm! I'm in the mood for pizza, for some reason. I made some great soup on Monday night--Chicken Enchilada Soup--that I made into beef enchilada soup, I've eaten it every night--dipping chips into it--and it's been wonderful. Might make it again tomorrow night since we're supposed to have cold weather. Sure beats the 100+ temps we had ALL summer long! How's everyone doing tonight? Abby--love the pic of Georgie under the tree! Had to wait til I got home to see it. Love the orangies!

  16. Let's see if I can find it, GD. It's one of those recipes that's so easy---other than browning ground beef and cutting up an onion and a red bell pepper, everything else is just 'open and dump in'. It's supposed to be a crock pot recipe, but I just made it on top of the stove.

    1 lb. ground beef
    1/2 cup chopped onion (I used a lot of onion!)
    1 chopped pepper (yellow, red, or green)

    cook until meat is browned; then add in the following:

    1 15 oz. can black beans
    1 14.5 oz. can diced tomatoes (the one w/the sweet onion in it is the one I used)
    1 10 oz. pkge. frozen sweet corn
    1 10 oz. can enchilada sauce (I used mild)
    1 can Cream of Chicken soup
    1 1/2 cups milk

    Cook over low heat until everything is blended together; Serve with cheese on top. Great for dipping chips!

  19. I'm going to try that recipe, FH! Sounds yummy!

    Deb, he just gave me the steroids for 6 days and antibiotic for a week for the bronchitis, and then Pro Air for the asthma. Supposed dose is 2 puffs 4 times a day - yeah right - don't think I'd survive that! I liked the Ventolin so much better, though I must admit that when I do use the Pro Air, it seems to work better.
    I haven't cat-proofed the bedroom yet, so I've been sleeping on the couch, which is better than the bed, but it still is accumulating cat hair, so not great.

    I'm trying to figure out how to catproof my sleeping space. Option 1 is the most logical - keep the cats out of the bedroom. However, the room is huge, about half the size of the apartment, and I really want the boys to have the extra space to run around. Option 2 is to get a loft bed that they can't get into. I've seen one at Ikea that I like. Option 3 is to somehow block off half of the bedroom to sleep in where the cats can't get in - don't know if that's doable. I also thought as an option 4, to get a kind of canopy bed, like you see with nets/curtains, keeping out the cats/cat hair. Not sure the boys wouldn't just shred the netting, though.

  20. I know I've posted this MANY times here, but this is what I'll be making this weekend since the temps. in the DFW area are really chilly (beat the 100+ temps. we had the entire summer!) and MIGHT be freezing this next week:

    Pasta E Fagioli Soup

    Ingredients
    • Kosher salt
    • Freshly cracked black pepper
    • 3/4 cup small macaroni
    • 1 tablespoon extra-virgin olive oil
    • 1 medium onion, chopped
    • 4 cloves garlic, minced
    • 2 stalks celery, diced
    • 3/4 pound lean ground sirloin
    • 2 medium carrots, grated
    • 1 (10-ounce) jar Prego Traditional marinara sauce
    • 1 (14-ounce) can diced tomatoes with their juice
    • 1 (14-ounce) can kidney beans, drained and rinsed
    • 1 (14-ounce) can cannelini beans, drained and rinsed
    • 1 bay leaf
    • 1 quart beef stock
    Directions: In a Dutch oven or large, heavy-bottom stockpot, heat the oil and saute the onion, garlic, and celery until just soft, about 3 minutes. Add the ground sirloin; season generously with salt and pepper and cook until there's no pink left in the meat. Drain off any excess fat. Add the carrots, marinara sauce, tomatoes, beans, bay leaf, and beef stock. Bring to a boil, reduce heat, and simmer until the vegetables are tender and the flavors have time to develop, about 20 minutes. Stir in the macaroni and simmer until pasta is tender.
    Make sure you use Prego sauce!
    This is so good that you don't have to even include the beef (sorry HM!)
    Sprinkle with Parmesean cheese and serve with bread--Yum!

    I tried him with a little of the prescription food mixed in with his regular tonight; so much for worrying he wouldn't eat it, he snarfed it up so fast it all came back up (yuk).

  22. FH, love, love that soup!!! Will have to try it :) Wonder if it can be made in a crock-pot for just a couple of hours.

    GD, how about using an air cleaner/filter for the bedroom? It might help a lot with the dust and cat hair, I know it helps in mine.

    Kilroy, can you feed him smaller portions but more meals a day (say one in the morning, one when you get home and one before bed) then maybe he wouldn't eat so fast and lose it right afterwards.

  25. GD, if you put a sheet over the covers when you are gone it helps a lot, and on the filter thing try to get one that has a washable filter (less expensive in the long run if you can wash vs replace filters all the time).

    Ok really have to go lie down otherwise I won't and then come morning, oooohhhhh really don't want to be driving after 8 hrs @ that place and being awake for 24 hrs.

    And pssstttt the NS is open too, ta ta for now...

  27. AZDeb--I've made it in a crock pot, too, but it's just as easy to do in a Dutch oven type pan if you want to. Just don't add the pasta at the end until a few minutes until ready to serve or it will get soggy. With a salad and garlic bread, it's such a great meal!

    Man-friend is such a simple guy---he'll (like myself!) eat a sandwich for each meal. After introducing him to these soups, he loves them as much as I do. I like to grate some fresh Parm. on top, and then serve with a salad.

  28. Joan it is one of my favorite shows! I didn't see it this week. It is a bit hectic here. I am an elf that prepares Christmas for a home of children with no parents or parents have terminated their rights. It is a rough group, but they deserve to know that there is such a thing as Christmas and love. I am so tired--but I am thrilled that everything is ready! Tomorrow my Student Council kids will shop for Salvation Army. The Christmas Parade is also tomorrow night--it is a very long weekend. I look forward to sleep on Sunday night!
