Thursday Caroling Cafe December 9 2011

  1. The kittehs are getting ready to go caroling in TDK land today! All kittehs are invited!

    Breakfast is a catered affair, and as you munch, you can hear the kitteh choir practicing.

    A couple little voices are WAY out of tune (Luna and Willow) so Hermes gently shushes them, saying "Hey, little ones, just listen to everyone else first" and they giggle and swat each other.

    Come on in! It's a festive cafe, with pretty green, gold and red decorations everywhere!

  2. Morning Sio!.................... nice Cafe, I'll have a large cuppa and a bagel please................... ooooooh, the kitties sound wonderful practicing their choir songs.............

    ............ nice and cool here this morning, might even have to break out a sweater for today!.............. off from w**k, but will be working here with Mr. AV....................

    .......... anyone have a good fudge receipe? I need to make a big batch this weekend for gifts at my office.............. I'd love one for the peppermint kind................

    No wish I did have a good fudge receipe but then again maybe not, that was always my downfall...my Mom made the best :)

  8. Morning ladies!
    It's cool here, too - 57 degrees. I woke up freezing a couple of times last night. I also had Bobby sleeping right next to me since he was cold - it was nice, but I woke up wheezing and coughing :(

    I bought a nice entertainment center yesterday at Faith Farm and the handyman at work is going to help me pick it up today since he has a big van and the piece won't fit in my car.
    Also have to either saw some of the bottom of my tree or get a new stand. After hitting three stores, I finally found a stand for a 6 ft tree. Then I went and bought a six ft tree - and it doesn't fit!!!! It's lying on the floor at home, much to Bobby's entertainment. Arrrgh!

I'm a little nervous about undertaking the 'fudge' project.............I'm a savory cook, and baking/sweets are my 'Achillies heel'............ for some reason when I have to measure, time or follow printed instructions, I fall apart! LOL ............

  11. Good Morning! The cafe looks great Sio! Comet had to be asked to wait for Leela before heading thru the wormhole - he is so excited to go caroling! He sings all the time, trying out new tunes every day! He has his reindeer antlers on (why not? there is a reindeer named Comet!) and is waiting anxiously for Leela to put on her pretty green velvet dress. Zoom - off they go!

  13. Falalala fun in the festive cafe today, thanks Sio for organizing the little
    ??angelic kit choir! Crockey will add his altomeow and Lucky will accentuate the tunes with chirping upon cue! Mmm fudge, luv it & leave it alone! My mom made great old fashioned fudge...I only attempted it once & it got sugary instead of creamy! Ooo a very large cuppa peppermint joe to go and 2 choco dipped biscottis pleeze Tux with your smooth baratonemeow...now a smooch & back to wurk for me and choir practice for Tux, waves to all still cafe clutching...later kits!

  14. One of my jobs when I was a teenager was selling fudge to tourists - I can't even look at the stuff to this day & the smell makes me ill. Probably a good thing :)

  15. AV, may I suggest the marshmallow cream version? Foolproof, as jeankit said the old fashioned kind is designed to trip up novice fudge makers. And the marshmallow cream jar has the recipe and it is really adaptable to making large quanities and adding nuts etc. And it tastes pretty good too.

  17. ok, thanks guys, I did buy a jar of marshmellow cream, but I don't know if it has the receipe on it.............. my secretary told me yesterday (she loves to bake) that the receipies that call for a candy thermometer and specific temps are more difficult - I'll look on the jar............ be back in a while........ post a receipe (please) if you have an easy (or stupid-AV proof) one! thanks!

  18. While specific temps are important in baking, and even more so in fudge, the marshmallow cream recipe I -think- indicates to bring to a rolling boil for X minutes, and that too works. I think it's something like 7 minutes of a good rolling boil gets you to soft-ball stage.

    When you take the marshmallow cream off the heat and add vanilla, this is where you would also add your peppermint flavoring (pure peppermint extract or peppermint oil; use LESS oil than extract)

    I used to make my mom's fudge recipe that included marshmallow fluff OR marshmallows. There's just something rich and creamy and smooth about a fudge that's cooked on the stove that you just don't get with microwave fudge.

  20. The Marshmallow Cream/Fluff recipe is the one I always used to make....don't do any holiday baking, haven't for years....I'd just eat it all!

  22. Never-Fail-Fudge

    2 1/2 c. sugar
    3/4 tsp. salt
    1/2 stick butter or margarine
    1 5 oz. can evaporated milk (2/3 c.)
    1 Jar (7 1/2oz) Marshmallow Fluff
    3/4 tsp. vanilla
    1 12-oz. package semi-sweet chocolate pieces
    1 /2 c. chopped walnuts

    Grease a 9-inch square baking pan; set aside. In large saucepan combine the first 5 ingredients. Stir over low heat until blended. Increase heat to Medium and bring to a full-rolling boil being careful not to mistake escaping air bubbles for boiling. Boil slowly, stirring constantly for 5 minutes (use Soft-Ball test). Remove from heat, stir in vanilla and chocolate until chocolate is melted. Add nuts. Turn into greased pan and cool. Makes 2 1/2 pounds.

    Hint: As with all fudge recipes, cooking time will vary depending on factors such as humidity and altitude. For best results, use the softball test to make sure the fudge has been cooked enough.

  27. I know I have fudge recipes at home, I have never made them but they came from the holiday cookie exchange I used to participate in. I know many candies can be affected by the humidity as well. I will look this evening and post any that fit the bill.

  28. ... thanks guys, that receipe is very similar to the one's I'm looking at..........

    ..... one more question - some say to 'grease' a baking dish with butter or crisco............ others say to line with wax paper........... still others say to line with foil................

    .......which works best? and sticks the least?............ I'm thinking perhaps wax paper over a greased dish? ............... what do you guys think?

  29. line with over lapping foil, and butter that. then you can lift the whole batch out by the foil ends and lay on cutting board, then strip away the foil. makes it really easy then to cut into squares
