Recipe: Hashbrown Casserole

  1. I was supposed to post this on Monday and I completely forgot.

    Hash Brown Casserole

    2 pound bag of hashbrowns
    8 ounces of sour cream
    1 can of cream of chicken or mushroom soup
    3 cups of shredded cheddar cheese
    ¼ cup butter, melted
    salt and pepper to taste
    ½ cup butter
    2 cups cornflakes, crushed

    In a large bowl, mix together melted butter with soup, 2 cups cheese, sour cream and salt and pepper, if desired. Add potatoes and stir until well combined. Spoon mixture into 9 x 13" pan. Top with flakes and then remaining 1 cup of cheese. Cut butter into thin slices and arrange on top of casserole, covering as much as you can. Bake at 350 for 50 min.

    If you like onions then you can also add ½ cup of diced onions.

    You make this a one pan meal by adding bacon, sausage, ham, smoked sausage, or chicken, etc.

  3. Ooh, that sounds yummie. Thank you Ppearson. A gal here in our office used to make this casserole or something similar, but she found a new job. My co-workers will be delighted at our next breakfast pot-luck!

  7. Yay, ppearson! Wasn't in the office on Monday, so I didn't miss it. Had a nice Monday, actually. Boss asked me if I'd go stay at his house while two workers were fixing the A/C - took all day! Yay, hung out in front of TV, read a book, found lunch in fridge - works for me! (except of course for all the work that was waiting for me on Tuesday morning!)
