  6. Chocolate cheese cake #1 (10–12 servings)

    Bottom:
6 oz. crumbled chocolate cookies +
50 g melt butter/shortening mixed together in a dish with high sides

    Filling:
    4 leaves of gelatine +
1 tbsp boiling water (first let the leaves soak in cold water, squeeze off the extra liquid, melt them in boiling water)

200 g dark chocolate melt and cooled down
    50 g chopped dark chocolate
    200 g unflavored fromage frais (~ Philadelphia)
    3/4 dl sugar
    1 tsp vanilla sugar
    2 yolks
    Blend all these in.

2 egg whites + 3/4 dl sugar whipped to hard foam
    2 dl cream whipped
    Add the foams.

Pour the filling over the bottom, cover it and let it stay in the fridge overnight. Decorate with chocolate and fruit/berries.

A tip! Add 2-4 tbsp brandy or Kahlua into the filling.
A tip #2! Use white chocolate + 2 tbsp citrus liqueur . Remember to double the amount of gelatine leaves.

PS. I translated this from a Finnish recipe. Be cautious! ;)
