    Easy Chocolate Cake
    (Scandinavian)

    Yield: 12 servings

    Ingredients
    1+ ¼ cup (170 g) all-purpose flour
    2 tablespoons unsweetened cocoa powder (dutched/dark)
    2 teaspoons baking powder
    2 pinches salt
    1 cup (200 g) sugar
    1 tablespoon vanilla essence
    ½ cup (1.2 dl) milk or water
    ½ cup (1.2 dl) vegetable oil (flavorless)
    2 eggs

    Ingredients for frosting
    2/3 cup (1.6 dl) heavy cream or whipping cream
    9 oz (260 g) semisweet chocolate (40-50% cocoa)

    Method

    1. Preheat oven to 350 deg F (Gas mark 4 or 180 deg C)
    2. Grease a 9 inch (23 cm) cake tin.
    3. Mix flour, cocoa powder, baking powder, salt, sugar and vanilla essence in a bowl.
    4. Add milk/water, vegetable oil and eggs.
    5. Mix everything together until smooth, either by hand or by using an electric mixer at slow speed.
    6. Transfer to bake tin and bake at 350 degrees until a wooden pick inserted in center comes out clean, approximately 35 to 45 minutes.
    7. After the cake has cooled, slice the cake through the middle to make two layers (easier if the cake has been in the fridge).

    Frosting

    1. Heat 2/3 cup (1.6 dl) of heavy cream or whipping cream in a sauce pan.
    2. Remove from heat, add 9 oz (260 g) of finely chopped dark semisweet chocolate, stir until smooth, and let it cool until in thickens, if needed in the fridge.
    3. Use one 1/3 of the frosting between the two layers, 1/3 on top, and the rest around the cake. Put the cake into the fridge for one hour or more to harden the frosting.
    4. This cake should have room temperature when served.

    Variations

    1. You may substitute 1-2 tablespoons of cream with rum for the frosting.
    2. You may cut the top of the cake to make a flat surface before adding the frosting.
    3. If you are making it for someone's birthday I would suggest doubling the recipe because this recipe makes for a short, thin cake (suggested by Cyrus, August 2008)

    I had to stop in and say hi to the night shift. We are waiting for my niece to come over and watch Maddie. Then we can leave for the party..whoo hoo! It will be nice to get out and see friends.

  16. Yup, because he's had eye infections before - several of 'em - they were OK with just giving me the drops, but said to take him in on Tuesday if he wasn't any better. He's fine in himself, but his right eye is half closed, and there's quite a bit of discharge.

    They've been quite happy having me slobbing about all day, yes! In fact Button's only just got off my lap, she's still be here now but Bones was demanding food...

  19. Finnish Chocolate Cake

    200 g baking chocolate
    200 g butter
    4 eggs
    2 dl sugar
    4 tblsp cocoa powder
    1,5 dl wheat flour
    1 tsp baking powder

    Frosting
    150 g baking chocolate
    1 dl cream
    1 tblsp butter

    Melt chocolate and butter (Mix them together in a dish. Put the dish inside a casserole filled with water. Boil water in the casserole.)
    Mix eggs and sugar to a foam.
    Add cooled chocolate-butter mix.
    Mix cocoa with flour.
    Mix all the other dry ingredients.
    Add cocoa-flour mix gently.
    Bake in the oven 347 F about 40 minutes.

    Prepare the frosting. Heat cream in the casserole, but don't boil.
    Add chocolate and butter.
    Mix 'till it's even.
    Let the cake cool down and spread the frosting.
    Enjoy!

  23. Hello everyone! Had a lovely day today, went off to a Maize maze and picked strawberries, they had the most, biggest, red-est and tastiest strawberries I've seen for a long time :)! Great to see these chocolate recipes too, I've been looking for something to do with the huge amounts of cooking chocolate we have.

  28. Hi everyone, been lazy today too although I shouldn't have been as I have a really busy week coming up and this house is almost ready to be declared a disaster area. I did get three loads of laundrey out on my line but knew I really had too as they frown on nakedness at work. Dangerous I guess for kitchen workers LOL

  30. Sorry chey, I got distracted by Sloopy's videos! My gravator is Button, she's more ginger down the back than Doxie (going by the pictures on your blog), but facially they're quite similar!
